I love starting my morning off with a high-protein breakfast. It helps to keep me full all morning long. Although I do love overnight oats like my Lemon Poppy Seed Overnight Oats and my Chocolate Raspberry Overnight Oats, I can get sick of oats quickly.
These pancakes are great because they're made with oat flour so they're essentially like oats, just in delicious fluffy pancake form!

These blueberry pancakes are a great way to start your day off with an easy and healthy breakfast. This recipe is made with simple ingredients that you can pick up at your local grocery store.
Dry Ingredients:

- Oat Flour - You can make your own oat flour at home by simply blending oats in a blender until they resemble flour.
- Baking Powder - This helps to achieve perfect fluffy protein pancakes.
Wet Ingredients:
- Unsweetened Soy Milk - You can use any plant-based milk, however, I recommend using unsweetened soy milk because it is higher in protein than other plant-based milks.
- Fresh Blueberries - You can use fresh blueberries or frozen blueberries. However, I recommend using fresh because frozen blueberries will dye the whole pancake batter purple.
- Vanilla Extract - I love adding a little bit of vanilla extract to enhance the natural flavor of the protein pancakes.
Pancake Toppings:
- Vegan Yogurt - Any vegan yogurt will work. There are plenty of high-protein vegan yogurts that would be a great addition to these vegan protein pancakes. I personally opt for coconut yogurt because I love the creamy texture and flavor.
- Fresh Fruit - You can add any fresh fruit of choice. I love adding bananas, strawberries, and fresh blueberries.
- Maple Syrup - No pancake recipe is complete without a generous drizzle of maple syrup. You can also use date syrup or any plant-based syrup of choice!

How To Make These Gluten Free Blueberry Protein Pancakes:
I love making these easy blueberry protein pancakes because it is such a delicious recipe that feels like regular pancakes, only it has extra protein!
1. Begin by combining all the dry ingredients together in a large bowl and mix until combined.
2. Add the wet ingredients to the dry ingredients and mix until the perfect batter consistency has formed.
3. Turn your skillet to medium heat (about 300 degrees if using an electric griddle). If your skillet is not a nonstick, I recommend adding a little vegan butter to prevent the pancakes from sticking. Add half a cup of batter to the skillet and let cook until bubbles have formed on top. Once the top has some bubbles, flip the pancake. The flipped side should be nice and golden brown. After about 1-2 minutes the other side should be cooked and you will be ready to enjoy your blueberry protein pancakes!
4. Top with your favorite pancakes and a generous drizzle of maple syrup.
Hint: It's very easy to burn pancakes. The key to perfectly golden brown pancakes is slowly heating the skillet and never heating it past medium heat.
Substitutions:
There are a variety of substitutions that can be made to this recipe if needed. Here are some of the common ones.
- Flour - You can replace the oat flour with whole wheat flour or all-purpose flour if needed.
- Milk - If you want a low-calorie protein pancake you can use almond milk, or you can use oat milk as a soy substitute.
- Protein Powder - You can use your favorite protein powder in these pancakes. If you are not vegan, whey protein powder will work as well.
Blueberry Protein Pancake Variations:

- Chocolate Blueberry Pancakes - You can use your favorite chocolate protein powder instead of vanilla protein powder for a delicious variation.

Homemade blueberry pancakes are great because you only need a few simple pieces of equipment to make them. Here's what I recommend using.
- Mixing Bowl - You will need a large bowl to mix the pancake batter in. I love these because they fit perfectly in the dishwasher.

Top Tip:
