Risotto has always been one of my go-to easy meals. I frequently make my Sunflower Seed Risotto and my Winter Vegetable Risotto. They are some of my favorite risotto recipes. However, I have been wanting to create a creamy risotto full of fresh herbs and a combination of fresh mushrooms and that's exactly what this recipe is! It's flavorful, nutritious, and absolutely delicious!

This delicious creamy herb risotto combines classic risotto ingredients with a delicious homemade Organicgirl girl dressing for the perfect flavorful risotto. You can find all the ingredients for this recipe at your local grocery store.
Risotto:
- Arborio Rice - Arborio rice is essential for creating the creamy texture that makes risotto famous. It absorbs liquids slowly, releasing starches that result in that lush, velvety al dente consistency.
- Yellow Onion - Yellow onions provide a foundational flavor to the herb risotto, adding a sweet and savory dimension to it.
- Mushrooms - Mushrooms are rich in umami, adding depth and a satisfying meaty quality to the dish. They're also a good source of nutrients like selenium and vitamin D. I recommend using a combination of fresh mushrooms. Most grocery stores sell a mix of shiitakes, baby bella, and oyster mushrooms. I love this because it has meaty mushrooms and soft mushrooms.
- Vegetable Broth - Vegetable broth serves as the cooking liquid, infusing the risotto with essential flavors and making it suitable for a vegan diet. All the vegetables will be cooked in vegetable broth since the goddess dressing is oil-based. This helps reduce the calories of the dish.
- Nutritional Yeast - Nutritional yeast not only adds a subtle cheesy flavor but also provides essential vitamins, including B-complex vitamins.

How To Make This Mushroom And Herb Risotto:
This creamy risotto is one of my favorite quick and easy meals. It makes a great main dish or side dish for any occasion.
- Heat ¼ cup of vegetable broth in a large pot (see my recommendations below) over medium heat.
- Dice the onion and add it to the pot and sauté until they become translucent about 3-4 minutes.
- Add the mushrooms and cook until browned.
- Add the remaining vegetable broth and arborio rice. Mix and cover. Allow to cook until the rice has absorbed all the liquid and it is al dente, stirring every so often.
- While the rice is cooking, make the herb goddess dressing. 1. Add to blender: lemon juice, cider vinegar, tahini, agave, garlic, green onions, basil, parsley, salt, and pepper.2. Whirl until pureed.3. While the blender is running on low, remove the center cap and slowly stream oil into the puree. the dressing will emulsify.
- Once the risotto rice is cooked, turn it to low heat. Add the nutritional yeast and peas. Mix until combined.
- Add half of the dressing (you will have leftovers). Mix until combined.
- Add the entire container or Organicgirl SUPERGREENS! and mix. Cover until the greens are wilted.
- (optional) top with fresh herbs and sliced green onions. Serve and enjoy!
Hint: The dressing recipe makes more than you will need for this recipe. You can keep it in your fridge for up to 3 weeks. You can save it for when you make this recipe next, or use it for salads or buddha bowls. It is absolutely delicious!
Substitutions:
There are a handful of easy substitutions that can be made to this creamy vegan herb and mushroom risotto recipe. Here are some common substitutions that can be made that will give you the same delicious results!
- Rice - Although it is recommended to use arborio rice, you can actually use any rice variety to make this herb risotto. It will change the texture slightly, however, overall it will work just fine if needed.
- Vegetable Stock - You can use vegetable broth, vegetable stock, or even water if needed. It will all affect the flavor slightly, but not majorly.
- Herbs - You can play around with the herbs in this recipe≥ You can use fresh thyme, fresh rosemary, fresh mint, etc. Keep in mind these all have strong flavors that will change the flavor. However, they can change the flavor into something more suited to your personal preference.

- Lemon Herb Risotto - You can squeeze a lemon or two on top of this risotto for the perfect citrusy twist.
- Instant Pot - You can make this vegan risotto in an Instant Pot or pressure cooker of choice to cut down on cooking time. To do this add all the ingredients to the instant pot with an additional cup of broth or water. Set to high and cook for 15 minutes.

How To Store Vegan Herb Risotto:
This creamy mushroom and herb risotto is a great meal prep option and delicious leftovers because it stores so well. I recommend storing this in airtight containers. If stored properly it will keep for 1-2 weeks in the fridge. However, if you plan to store it longer, it can be frozen as well. If you freeze it I recommend reheating it on the stove in a medium saucepan rather than microwaving it. This vegan risotto will keep for up to 3 months in the freezer.
Top Tip:
Most of the flavor of this herb risotto resides in the dressing. Therefore I recommend adding it to taste. If you like a light herb flavor just add a little, if you like a lot, add all of it!
