Peach Mango Overnight Oats

Dry Ingredients:

Wet Ingredients:

  • ½ teaspoon vanilla extract
  • 1 cup plant based milk I used coconut
  • ½ cup coconut yogurt
  • 1 mango
  • 1 peach

Instructions
 

Prepare the Fruits:

  • Wash and dice the ripe peach and mango into small, bite-sized pieces.

Combine Dry Ingredients:

  • In a bowl or mason jar, combine the rolled oats, chia seeds, ground flaxseed, and PlantFusion Collagen Beauty. Mix until all the ingredients are combined.

Add Wet Ingredients:

  • Add the plant-based milk and vanilla extract to the overnight oats mixture and mix until combined.

Incorporate Diced Fruits:

  • Add a layer of the fresh cubed mango and peaches to the bottom of the jar(s). Add the overnight oats mixture on top of the fruit.

Top with Coconut Yogurt:

  • Spoon a generous dollop of coconut yogurt on top of the overnight oats. This adds a creamy texture and complements the tropical flavors.

Cover and Refrigerate:

  • Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Allow the oats to soak overnight or for at least 4-6 hours.

Serve Cold:

  • The next morning or when ready to eat, give the overnight oats a good stir. If the mixture is too thick, you can add a splash of coconut milk to reach your desired consistency.
