Rice the cauliflower and add to the bowl. Slice the tomatoes and bell peppers. Dice the avocado, jalapeño, and red onion and add to the bowl. Chop the cilantro and add to the bowl.
For The Raw Vegan Meat:
Begin by chopping the mushrooms, carrots, and walnuts. This helps to prevent chunks. Add to a food processor with remaining meat ingredients and pulse until it becomes grounds.
Scoop out and top the salad off.
For The Creamy Cilantro Lime Dressing:
