Ingredients
  

For The Raw Vegan Taco Salad

  • 3 heads romaine lettuce
  • 1 head cauliflower
  • 1 red onion
  • 2 avocados
  • 1 cup cherry tomatoes
  • 2 bell peppers
  • ¼ cup cilantro
  • 1 jalapeño

For The Raw Vegan "Meat":

  • 1 container baby bella mushrooms
  • 3 medium carrots
  • ½ cup walnuts
  • 2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ teaspoon oregano
  • 2 tablespoon nutritional yeast
  • ¼ teaspoon sea salt

For The Creamy Cilantro Lime Dressing:

  • 1 cup vegan yogurt
  • ¼ cup chopped cilantro
  • 2 limes juiced

Instructions
 

For The Raw Vegan Taco Salad:

  • Roughly chop the romaine and add to a large bowl.
  • Rice the cauliflower and add to the bowl. Slice the tomatoes and bell peppers. Dice the avocado, jalapeño, and red onion and add to the bowl. Chop the cilantro and add to the bowl.

For The Raw Vegan Meat:

  • Begin by chopping the mushrooms, carrots, and walnuts. This helps to prevent chunks. Add to a food processor with remaining meat ingredients and pulse until it becomes grounds.
  • Scoop out and top the salad off.

For The Creamy Cilantro Lime Dressing:

  • Finely chop the cilantro and add to a bowl with the vegan yogurt and lime juice and mix until smooth.
  • Pour over salad, toss, and enjoy!
