Vegan Spinach Artichoke Dip

Ingredients
  

  • 3-4 golden potatoes
  • 9-10 cloves garlic
  • 2 shallots
  • 2 teaspoon miso paste
  • cup vegetable broth plus extra for sautéing
  • ¼ cup raw cashew butter "VEGAN10" for $10 off
  • cup nutritional yeast
  • ½ teaspoon salt
  • 2 cans quartered artichoke hearts
  • 1 cup frozen chopped spinach
  • 1 box gluten-free pasta of choice I recommend linguine

Instructions
 

  • Begin by roughly chopping the potatoes and boiling them until soft.
  • While the potatoes are cooking, prepare the remaining ingredients. Get the spinach out to defrost. Mince and chop the garlic and shallots. Strain and rinse the artichoke hearts.
  • Cook the pasta according to package instructions.
  • Once the potatoes are done, strain and add to the blender along with vegetable broth, miso paste, nutritional yeast, raw cashew butter, and salt. Blend until silky smooth.
  • Sauté the shallots and garlic in a touch of vegetable broth. Add the artichoke hearts and spinach. Pour the sauce over and mix.
  • Add the cooked pasta and allow to cook on low for about 5 minutes to allow the sauce to thicken up. Serve and enjoy!
