Wet Ingredients:

  • cup coconut butter make sure it's super smooth and creamy
  • 2 flax eggs 1 flax egg = 1 tablespoon ground flaxseed mixed with 3 tablespoon water
  • 2 teaspoon pure rum extract

Instructions
 

  • Begin by preheating the oven to 350. Make the flax eggs by combining the ground flax seed and water together in a small bowl and letting rest for about 10 minutes.
  • Next, sift together all the dry ingredients in a large bowl and mix. 
  • Add the flax egg, rum extract, and coconut butter to the dry ingredients. Mix until cookie dough forms. Cover and place the cookie dough in the fridge to chill for 15 minutes.
  • Once the dough has chilled, use a cookie scoop to scoop out balls of cookie dough and place them on the cookie sheet. Place in the oven to bake for 12-15 minutes.
  • Once done, place on a wire rack and allow to chill for 10-12 minutes, and enjoy!
