Healthy Vegan Grapefruit Bars

These Grapefruit Bars are the perfect Spring dessert. They're sweet, gooey, and tart. This recipe is made with whole foods plant-based ingredients and is perfect for all. These bars are gluten-free, refined sugar-free, oil-free, and vegan.

For The Crust:

For The Grapefruit Filling:

  • 1 ¼ cups grapefruit juice  fresh
  • 2 cups unsweetened almond milk
  • ½ cup Maple Crystals "NATURALVEGAN" for $10 off
  • 2 teaspoon grapefruit zest
  • ¾ cup cornstarch
  • ½ cup water

Instructions
 

  • Begin by combining the dates, cashew butter, vanilla extract, and lemon zest together in a food processor and pulse until smooth. Preheat the oven to 350.
  • Add the cassava flour and then pulse flour. Add the water to the flour mixture and pulse a final time until a buttery crust forms.
  • Prepare a square pan with either parchment paper, cooking spray, or vegan unsalted butter. 
  •  Press the crust into an even layer on the prepared pan and poke holes in it with a fork.
  • Bake for 10-12 minutes, or until golden brown. Let the crust sit at room temperature for 20-25 minutes to cool.
  •  Make grapefruit curd filling by melting the maple crystals with the fresh grapefruit juice together in a large saucepan on medium heat. Once the maple crystals have melted add the grapefruit zest and almond milk. It will curdle and separate at first, but be patient and continue mixing and it will form a solid mixture again.
  • Mix the cornstarch and water together in a separate small bowl. Pour the mixture into the grapefruit juice mixture and whisk constantly until it thickens. Once thickened, remove from heat and pour over the cooled crust. Place in the fridge to cool for at least 2 hours to chill.
  • Once the bars have chilled, sift erythritol on top of the pink grapefruit bars and serve immediately!
