For The Quesadilla:

For The Buffalo Sauce:

For The Plant Based Ranch Dip:

  • ¼ cup raw cashew butter
  • 3 tablespoon plant based milk
  • 1 teaspoon miso paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon apple cider vinegar
  • 2 teaspoon nutritional yeast
  • cup fresh chives
  • ¼ cup fresh dill
  • ¼ cup fresh parsley

Instructions
 

  • Begin by pre-heating a large skillet to medium heat. If the skillet is not non-stick, I recommend melting a bit of oil such as olive oil or vegan butter to prevent sticking.
  • Mash the chickpeas with a fork or potato masher (you can also pulse them in a food processor).
  • Make the buffalo sauce by combining all the ingredients together in a high speed blender and blending until smooth and creamy.
  • Pour the buffalo sauce over the mashed chickpeas and mix. Spread a layer of vegan cream cheese on a tortilla and place about ⅔ cup of buffalo chickpeas on top. Cover with a second tortilla and press to flatten.
  • Once the skillet has reached medium-high heat, place the quesadillas on the skillet and cook until golden brown. Flip and repeat cooking until both sides are golden brown.
  • Make the vegan ranch by combining all ingredients except the fresh herbs in a high speed blender and blending until smooth and creamy. Once smooth, finely chop the herbs and add them to the sauce. Pulse a few times.
  • Serve immediately and enjoy!
