Red Curry Peanut Noodle Salad

Ingredients
  

Salad

  • 1 package kelp noodles
  • 2 cups purple cabbage
  • 1 bell pepper
  • 1 crown broccoli
  • 1 can water chestnuts
  • 2-3 carrots
  • 1 cup sugar snap peas
  • 1 package tempeh
  • 3 green onions
  • ½ cup cilantro

Sauce

Instructions
 

  • Begin by soaking the kelp noodles in water for about 15 minutes. This helps them to not be as crunchy.
  • Chop the cabbage into thin slices, cut the pepper into strips, shred the carrots, and chop the broccoli and green onions. Add to a large bowl with the kelp noodles and remaining salad ingredients.
  • Make the dressing by combining the peanut butter, red curry paste, miso paste, ginger, minced garlic, lime juice, and ¼ cup of water.
  • Top with extra cilantro and chopped peanuts. Serve and enjoy!
