Plant Based Peach Cobbler

For this peach filling:

  • 8-10 peaches
  • ¼ cup applesauce
  • 2 tablespoon tapioca starch
  • ¼ cup date sugar

For the Crumble:

  • Begin by preheating your oven to 375. Begin making the filling.
  • Slice the peaches into strips and add to a bowl (leave skin on for more nutrients!). In a small bowl combine applesauce and tapioca. Mix until smooth. Add applesauce mixture and date sugar to the peaches and mix. Pour into a baking pan and set aside.
  • To make the crumble simply add all ingredients together and mix. It may seem too thick, but you want it on the dryer side, because it will soak up fluid from the fresh peaches.
  • Start adding the crumble to the top of the peaches, making sure to fill in all areas.
  • Place in the oven and bake for 45 minutes. Once golden brown on top remove from oven and allow to cool for 10 minutes. Top with ice cream and enjoy your healthy peach cobbler!
