Ingredients
  

  • 4 cups vegetable broth
  • 1 onion
  • 3 carrots
  • 1 container mushrooms
  • 1 ½ cups chopped celery
  • 1 can lite coconut milk
  • 1 cup wild rice
  • 3 cups kale
  • 1 tablespoon Italian seasoning
  • 2 tablespoon Nutritional yeast
  • 1 teaspoon Miso paste

Instructions
 

  • Begin by chopping your onions, garlic, celery, and carrots. Sauté in a pot with a little vegetable broth.
  • Slice the mushrooms and add to mix.
  • Once vegetables become soft, add remaining ingredients and cook on medium-low for 20 minutes, ensuring the rice has cooked.
  • Serve with bread and enjoy!

Notes

If using an Instant Pot or Ninja Foodi, combine all ingredients together with 1 Cup water and cook on high for 10 minutes!
