  • 2 ½ cups Oats
  • ¾ cup coconut flour
  • ¼ cup flaxseed
  • 1 cup unsweetened apple sauce
  • 16oz bag fresh cranberries
  • 2 oranges (juiced/puréed)
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon baking soda
  • 1 cup plant based milk divided in half
  • ¼ cup date syrup

Instructions
 

  • Begin by preheating your oven to 375.
  • Add your oats to a high speed blender and blend to create your oat flour. Set aside. Make your flax egg by combining the flaxseed with ½ cup of the plant based milk. Let sit for ten minutes.
  • Add remaining dry ingredients (don't add flax egg yet) together with the cranberries. Add orange zest. Either juice or purée your oranges and add it along with the remaining ingredients and flax egg to the bowl with the dry ingredients. Mix until combined.
  • Pour into bread pan and top off with extra orange slices (thinly sliced). Place in the oven and bake for 50 minutes. Once done allow to cool 10-15 minutes before eating. Serve and enjoy!
