Ingredients
  

  • 1 package pizza dough gluten-free if you want to make this gluten-free.

For the oil-free cashew cheese:

For the sauce:

  • 1 6oz can tomato paste
  • 1 8oz can tomato sauce
  • 3 cloves garlic
  • 6 basil leaves

Toppings:

  • 1 bell pepper
  • ½ red onion
  • ½ cup mushrooms
  • kale
  • 2 roma tomatoes
  • basil

Instructions
 

  • Begin by making the cheese ahead of time. If you have not soaked the cashews ahead of time see notes. Combine all ingredients into a blender except the psyllium husk, blend until smooth. Add the psyllium husk and blend again, it will become more solid. Scoop into a shallow dish, cover, and place in the fridge for 2-3 hours.
  • When you are ready to make the pizza, preheat the oven to 400.
  • Make the sauce by combining all ingredients. Roll out the pizza dough, add sauce and spread over evenly.
  • Take the cheese out of the fridge and cut and stretch pieces over the pizza.
  • Cut the vegetables and place on top. place in the oven and cook for 20-25 minutes, or until the top gets browned. Serve and enjoy!

Notes

If you forgot, or do not have time to soak the cashews, you can do a quick soak instead. Add you have to do is add the cashews to a pot of boiling water and boil for 10-15 minutes!
