Lemon Avocado Kale Salad

This lemon kale salad is the perfect energy boosting superfood salad to enjoy on a hot summer day. It is super simple to make and only takes a few ingredients. This salad recipe is: vegan, oil-free, gluten-free, high protein, and low calorie!

Ingredients
  

  • 1 bunch kale
  • 2 avocados
  • 2 lemons
  • 1 15.4oz can cannellini beans
  • ¼ cup sunflower seeds

Instructions
 

  • Begin by washing your kale and de-stemming it. Add to a large bowl along with 1 avocado and the lemon juice. Massage the avocado into the kale, making sure everything is coated evenly.
  • Strain and rinse the beans, and add to the salad along with the sunflower seeds. Dice the second avocado and add to the bowl. Toss, serve, and enjoy!
