Buffalo Cauliflower Wrap

This buffalo cauliflower wrap recipe is the perfect healthy lunch to make on the days where salad just isn't cutting it. This vegan lunch wrap will keep you full for hours because of its surprisingly high protein content, who needs meat for protein these days! This oil-free vegan buffalo wrap is gluten-free, oil-free, vegan, dairy-free, low-calorie, and high in fiber!

Ingredients
  

For the Wrap

For the Vegan Ranch:

  • ½ cup raw cashews soaked overnight
  • ½ cup Plant based milk of choice almond
  • 1 teaspoon miso paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • cup fresh chives
  • ¼ cup fresh dill
  • ¼ cup fresh parsley
  • 1 teaspoon apple cider vinegar
  • 2 teaspoon nutritional yeast

Instructions
 

To make the wrap:

  • Chop your cucumber into half circles, and shred your carrots.
  • Place vegetables onto gluten-free wrap along with buffalo cauliflower.

To make the vegan ranch:

  • Add all ingredients except herbs to blender and blend until smooth. Once smooth finely chop and add to blender. Lightly pulse, and pour over wrap. Enjoy!
