  • Cook your rice according to package instructions.
  • Begin by dicing your onion and mincing your garlic. Add to a large pan and sauté in the coconut aminos.
  • Chop up the cauliflower and add to the pan and sauté. You may need to add a bit of the vegetable broth to it at this point.
  • Add the remaining ingredients together and cook on medium for 20 minutes.
  • Serve with cilantro on top and enjoy!

Notes

If using an instant pot, simply add all ingredients together (except rice) with an extra cup of water and cook on high for 12 minutes!
