These Samoa Truffles feature all the delicious flavors of the classic Girl Scout cookie with the simplicity of a truffle. This healthy dessert recipe is perfect treat to bring to all the Holiday parties. This recipe is vegan, gluten-free, paleo, refined sugar-free, oil-free, dairy-free, and whole foods plant based!
In a saucepan combine the pitted medjool dates, vanilla extract, and the coconut cream. Cook until the dates have broken down and the mixture has become thick and a caramel color. While still warm add to a blender and blend until smooth.
Combine the remaining ingredients together with the date coconut mixture in a large bowl. Stir until it is thick and forms a large ball. Roll into 18 balls, place on a parchment paper lined baking sheet, and set in the freezer for 15 minutes.
Add the chocolate chips to a double broiler and melt.
Remove the chocolate from heat as soon as it is melted. Dip the chilled truffles into the chocolate and set on a sheet of parchment paper. Top with some toasted coconut and set in the fridge/freezer until the chocolate has hardened (about 10 minutes in the freezer). Serve and enjoy!
