Apple Stuffed Sweet Potatoes

These Apple Stuffed Sweet Potatoes are the perfect fall side dish recipe, or light lunch. This recipe only requires a few simple ingredients, and is perfect for meal prepping. These stuffed sweet potatoes are: vegan, oil-free, gluten-free, and refined sugar-free.

Ingredients
  

  • 2 sweet potatoes
  • 3 apples
  • ¼ cup raw pecans
  • ¼ cup date syrup
  • cup water
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt

Instructions
 

  • Begin by preheating the oven to 400. Once the oven is preheated, poke holes into your sweet potatoes with a fork and bake until soft (about 40 minutes).
  • Once sweet potatoes are almost done baking, dice up your apples into cubes and add to a saute pan with the chopped pecans, date syrup, pumpkin pie spice, and water. Cook until all the water has evaporated and the apples have softened.
  • Once the sweet potatoes are done cooking and soft to the touch. Take them out of the oven and slice down the middle. Take a fork and mash the insides. Pour your apple pecan mixture into potatoes and top with additional date syrup.
