Step 1: Make the Dough In a small bowl, combine the warm water, coconut sugar, and yeast. Let sit for 5–10 minutes until foamy.
In a large bowl, whisk together the soy milk, oil, salt, and Anima Mundi Golden Moon Milk.
Add the yeast mixture to the wet ingredients and stir.
Gradually mix in the flour, starting with 3 cups. Add more as needed until a soft dough forms.
Knead on a lightly floured surface for 5–7 minutes until smooth and elastic.
Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Step 2: Add the Filling Roll out the dough into a large rectangle (about ¼-inch thick).
In a small bowl, combine the softened vegan butter, cinnamon, and coconut sugar. Mix until smooth.
Spread the softened vegan butter and cinnamon sugar mixture evenly over the dough.
Roll tightly from one long edge to the other to form a log.
Slice into 6 (or 12 small rolls) even rolls and place in a greased or parchment-lined baking dish.
