Soft layers of golden-hued cinnamon roll dough are swirled with a coconut sugar and cinnamon filling, then topped with a creamy golden moon milk frosting for a comforting, just-sweet-enough treat. Perfect for casual mornings, relaxed weekends, or anytime you're craving fluffy cinnamon rolls with a nourishing twist. And it can be prepped ahead for a next-morning bake—vegan, refined sugar-free, and made with only wholesome, plant-based ingredients.

Ingredients
  

For the Dough:

  • 1 packet dry active yeast
  • 3 tablespoons coconut sugar
  • ¼ cup warm water
  • ¼ cup cold-pressed avocado oil or vegan butter
  • 1 ½ cups unsweetened soy milk
  • Pinch of salt

  • 3 ½ cups all-purpose flour use 3 ¼ cups if using whole wheat

For the Filling:

  • 8 tablespoons vegan butter cashew milk-based, softened
  • ¾ cup coconut sugar
  • 1 ½ tablespoons cinnamon

Step 1: Make the Dough

  • In a small bowl, combine the warm water, coconut sugar, and yeast. Let sit for 5–10 minutes until foamy.
  • In a large bowl, whisk together the soy milk, oil, salt, and Anima Mundi Golden Moon Milk.
  • Add the yeast mixture to the wet ingredients and stir.
  • Gradually mix in the flour, starting with 3 cups. Add more as needed until a soft dough forms.
  • Knead on a lightly floured surface for 5–7 minutes until smooth and elastic.
  • Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

Step 2: Add the Filling

  • Roll out the dough into a large rectangle (about ¼-inch thick).
  • In a small bowl, combine the softened vegan butter, cinnamon, and coconut sugar. Mix until smooth.
  • Spread the softened vegan butter and cinnamon sugar mixture evenly over the dough.
  • Roll tightly from one long edge to the other to form a log.
  • Slice into 6 (or 12 small rolls) even rolls and place in a greased or parchment-lined baking dish.

Step 3: Second Rise

  • Cover the rolls and let them rise again for 30–45 minutes.

Step 4: Bake

  • Preheat oven to 350°F (175°C).
  • Bake the cinnamon rolls for 20 minutes, or until golden brown and cooked through.

Step 5: Make the Frosting

  • In a medium bowl, mix the vegan cream cheese, maple syrup, and Anima Mundi Golden Moon Milk until smooth and creamy.
  • Spread over warm cinnamon rolls and serve immediately.
