Preheat your oven to 400°F (200°C). Place Roots Farm Fresh Sweet Potato Slices on a baking sheet. Ensure that they are assembled in a single layer and they are not overlapping in the baking sheet. Place in the preheated oven and roast for approximately 25 minutes or until golden brown and tender.
Prepare the Green Goddess Dressing:
In a blender, combine lemon juice, apple cider vinegar, tahini, maple syrup, garlic, green onions, basil, parsley, sea salt, and black pepper. Blend until smooth - there should still be some bits of fresh herbs. Gradually add avocado oil while blending until the dressing reaches a creamy consistency.
