This delicious green goddess vegan sweet potato sandwich is the ultimate veggie sandwich. It's made with simple ingredients, easy to make, and packed full of flavor. This recipe is vegan, refined sugar-free, and can easily be made gluten-free.

Ingredients
  

For the Sandwich:

  • 1 bag Roots Farm Fresh Sweet Potato Slices
  • 1 heirloom tomato
  • 1-2 handfuls fresh arugula
  • 1 cucumber
  • 1 avocado
  • 4 ciabatta buns

For The Green Goddess Dressing:

  • ¼ cup lemon juice
  • ¼ cup apple cider vinegar
  • ¼ cup tahini
  • 1 tablespoon maple syrup
  • 2 cloves garlic
  • ¼ cup green onions
  • cup fresh basil
  • ¼ cup fresh Italian parsley
  • 1 ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup avocado oil

Instructions
 

Roast the Sweet Potato Slices:

  • Preheat your oven to 400°F (200°C). Place Roots Farm Fresh Sweet Potato Slices on a baking sheet. Ensure that they are assembled in a single layer and they are not overlapping in the baking sheet. Place in the preheated oven and roast for approximately 25 minutes or until golden brown and tender.

Prepare the Green Goddess Dressing:

  • In a blender, combine lemon juice, apple cider vinegar, tahini, maple syrup, garlic, green onions, basil, parsley, sea salt, and black pepper. Blend until smooth - there should still be some bits of fresh herbs. Gradually add avocado oil while blending until the dressing reaches a creamy consistency.

Assemble the Sweet Potato Sandwich:

  • Slice ciabatta buns and spread a generous amount of the Green Goddess Dressing on each slice of bread. (you can toast the buns prior to adding the dressing if you would like).
  • Layer roasted sweet potatoes, heirloom tomato slices, fresh arugula, cucumber slices, and avocado slices.

Serve and Enjoy:
