  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sliced peaches, ¼ cup maple crystals, and 1 tablespoon corn starch. Toss until the peaches are well coated.
  • Transfer the peach mixture to a 9x13-inch baking dish or 12-inch round skillet, spreading it out evenly.

Prepare the Crumble Topping:

  • In another mixing bowl, combine the oat flour, 1 ⅓ cups maple crystals, and a pinch of salt.
  • Add the unsweetened applesauce, softened coconut butter, and vanilla extract.
  • Add the baking powder to the mixture and stir until everything is well combined and forms a crumbly dough.

Assemble the Cobbler:

  • Sprinkle the crumble topping evenly over the peach filling, ensuring all the peaches are covered.

Bake:

  • Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.

Cool and Serve:

  • Remove the cobbler from the oven and let it cool for at least 10 minutes before serving.
  • Serve warm with a scoop of vegan vanilla ice cream.
