This easy cobbler recipe is made with mostly simple whole-food plant-based and basic pantry ingredients. Let's look at what you need.

- Prepare the Crumble Topping: Combine the dry ingredients except the baking powder. Add the wet ingredients. Stir until well combined. Add the baking powder and stir again until the simple cobbler batter forms a crumbly dough.
- Assemble the Cobbler: Sprinkle the crumble topping evenly on top of the peaches, ensuring they are covered.
- Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes until the topping is golden brown and the filling is bubbly.

Easy Substitutions:
- Ripe peaches: I prefer to make this vegan cobbler when I can find an abundance of peaches in summer. But nothing is to stop you from using canned or frozen ones to enjoy this dessert year-round. Get an equivalent of 6 cups of peach slices, thoroughly drained or defrosted. Just be sure to drain any extra liquid.
- Sweeteners: Use coconut sugar if maple crystals are unavailable.

Hi Deborah! I would omit the apple sauce and date sugar and use 1-2 tablespoons of maple syrup. I haven't tested this, but it would be my best guess for making a wfpb peach pie filling! Hope this helps 🙂
