This Vegan Spelt Flour Banana Bread Recipe is a healthier take on traditional banana bread. It combines the natural sweetness of ripe bananas and applesauce and the nuttiness of whole-grain spelt flour and walnuts for a wholesome and nutrient-packed treat—vegan, refined sugar-free, oil-free, and made with only plant-based ingredients.

Ingredients
  

Dry Ingredients:

Wet Ingredients:

  • 3 medium overripe bananas about 1 ½ cups mashed banana
  • cup unsweetened apple sauce
  • cup unsweetened soy milk
  • 2 teaspoons vanilla extract
  • ¼ cup maple syrup or liquid sweetener of choice date syrup, honey, yacon syrup etc.

Instructions
 

Preheat and Prepare the Pan

  • Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

Mash the Bananas

  • Mash the bananas in a bowl. You want them to be nice and mushy for the best texture. Set aside.

Mix Dry Ingredients

  • In a large bowl, whisk together the spelt flour, baking powder, and sea salt.

Combine Wet Ingredients

  • In a separate bowl, combine the mashed bananas, applesauce, soy milk, vanilla extract, and maple syrup (or your chosen liquid sweetener). Mix until smooth.

Combine Wet and Dry Ingredients

  • Pour the wet ingredients into the dry ingredients and stir to combine. Be careful not to overmix; just fold it together until it's fully incorporated.

Fold in Walnuts (Optional)

  • Fold in the walnuts (if using) gently.

Transfer to Loaf Pan

  • Pour the batter into the prepared loaf pan and spread it out evenly. Optional - you can top it with a banana sliced in half.

Bake the Banana Bread

  • Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Banana Bread

  • Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
