Every vegan needs a good cashew cream cheese frosting recipe. When I was younger (before I was vegan), I used to love baking cakes. I was really into decorating with fondant and such, but also loved creating flavorful cakes. I still have people rave about my old cakes, so you could say I have a little bit of credibility when it comes to cakes and frosting. And I can promise you that this cashew frosting recipe is BANGIN'.
How to make plant based frosting without powdered sugar:
If you're new to making homemade frosting let me tell you what 99% of frosting recipes are made of: powdered sugar, butter/vegan butter, and vegetable shortening. Um, yuck! These are honestly some of the most unhealthy ingredients out there. Why? They're high in saturated fats and refined sugars (which are high glycemic). Luckily for you, I strictly avoid these ingredients. This cashew cream cheese frosting recipe is made with all natural sweeteners, no oil, and completely vegan! You may be wondering how this frosting holds its shape. It's the coconut butter! Coconut butter works a lot like coconut oil, but it has fiber and all the other nutrients that are usually stripped away from coconut oil.
What makes this Cashew Cream Cheese Frosting recipe so healthy:
Like I said in the previous paragraph, this recipe is free of all the bas stuff. This cashew cream cheese frosting is: paleo, oil-free, vegan, refined sugar-free, raw vegan, dairy-free, and whole foods plant based! However it's not just that this healthy vegan frosting recipe is free of all the bad stuff, but it is also filled with super healthy ingredients. This vegan staple has simple ingredients that are health promoting!
How to store this vegan frosting recipe:
This cashew cream cheese frosting recipe keeps for up to one week in the fridge. This is one of those recipes that you will probably want to make and use right away. However if you are making a recipe like my Red Velvet Baked Oats, or my Carrot Cake Overnight Oats, and want to use the frosting over multiple days you can store it in an air tight container. I actually prefer to let this healthy vegan frosting recipe sit overnight before using, because it helps firm it up a bit. It all depends on what recipe you're making, but thought I'd share this simple tip!
