Summer is finally here, and the healthy refreshing recipes are coming in hot with this raw vegan buddha bowl! This green goddess bowl is packed full of superfoods and healthy fats for the ultimate filling raw vegan recipe. I love summer food, because it's so hydrating and so filling! I love eating raw vegan bowls like this one all summer long. This is no secret, but I love eating my smoothie bowls which I share over on Instagram for #smoothiebowlsaturday. I love these, because they are also raw vegan. I am not a raw vegan, but I believe there are tons of benefits to eating more raw produce!

How to eat more vegetables if I don't like them raw?

Trust me, I totally get it. I try my best to eat raw vegan meals, but sometimes my body just doesn't want it. I do believe that there are health benefits to eating raw vegan buddha bowls. However this green goddess bowl can still be lightly cooked and is still just as delicious! When I make the cooked version of this raw vegan bowl I like to lightly steam or blanch the vegetables. Cooking vegetables this way helps retain more of the vitamin and nutrients.

You can also up the satiation factor of this raw vegan buddha bowl by adding beans, or quinoa. This will cause the bowl to no longer be raw vegan. However if you are not on a fully raw diet (like me) adding these ingredients help to make the bowl a perfect healthy vegan dinner recipe.

What makes this green goddess raw vegan buddha bowl so healthy?

We all know that greens are super healthy for us. I like finding ways to eat greens everyday. However this doesn't always happen, and sometimes I can end up going a couple days without eating any. This raw vegan buddha bowl is the ultimate healthy bowl to get you back on track.

First and foremost this green goddess bowl is loaded with cruciferous vegetables like kale and broccoli. These are some of the healthiest vegetables on the planet. This bowl is also filled with plant based proteins and healthy fats making it delicious and filing. Last, but not least this recipe is topped off with sauerkraut. Sauerkraut is a fermented foods, and fermented foods have been proven to be amazing for gut health. All of these foods put together make the ultimate healthy green goddess bowl!

How to eat more raw vegan buddha bowls:

Like I said earlier I try to eat a lot of raw vegan bowls throughout the week. I love eating smoothies and bowls such as this green goddess bowl in my Coconut Bowls. Equipment

  • 1 vegetable spiralizer
  • Coconut Bowls "COCO-NV-10"

Ingredients
  

  • 3 zucchini
  • 2 avocados
  • 2 broccoli crowns
  • 1 cup peas
  • 2 lemons
  • 3 tbsp hemp seeds
  • 1 bunch basil
  • sauerkraut
Get Recipe Ingredients

Instructions
 

  • Begin by chopping the broccoli crowns and kale into bite size pieces.
  • Use a spiralizer to spiralize the zucchini and add to a large bowl with the kale and broccoli. Dice the avocados and add as well(it's okay to mash them up a bit, because it makes it creamier). Add the peas and seeds.
  • Juice the lemons and add the chopped basil. Mix well.
  • Top with sauerkraut and enjoy!
