How to eat more vegetables if I don't like them raw?
Trust me, I totally get it. I try my best to eat raw vegan meals, but sometimes my body just doesn't want it. I do believe that there are health benefits to eating raw vegan buddha bowls. However this green goddess bowl can still be lightly cooked and is still just as delicious! When I make the cooked version of this raw vegan bowl I like to lightly steam or blanch the vegetables. Cooking vegetables this way helps retain more of the vitamin and nutrients.
You can also up the satiation factor of this raw vegan buddha bowl by adding beans, or quinoa. This will cause the bowl to no longer be raw vegan. However if you are not on a fully raw diet (like me) adding these ingredients help to make the bowl a perfect healthy vegan dinner recipe.

Ingredients for this Raw Vegan Green Goddess Bowl:
- Zucchini
- Broccoli
- Peas
- Avocado
- Lemons
- Sauerkraut
- Hemp seeds

Green Goddess Bowl
Equipment
- Coconut Bowls "COCO-NV-10"
Ingredients
- 3 zucchini
- 2 avocados
- 2 broccoli crowns
- 1 cup peas
- 2 lemons
- 3 tbsp hemp seeds
- 1 bunch basil
- sauerkraut
Instructions
- Begin by chopping the broccoli crowns and kale into bite size pieces.
- Use a spiralizer to spiralize the zucchini and add to a large bowl with the kale and broccoli. Dice the avocados and add as well(it's okay to mash them up a bit, because it makes it creamier). Add the peas and seeds.
- Juice the lemons and add the chopped basil. Mix well.
- Top with sauerkraut and enjoy!
