What is jackfruit?
Jackfruit has definitely been a big trend recently, especially in the vegan community, for good reason too! There's actually two different types of jackfruit: sweet jackfruit and young jackfruit. Sweet jackfruit is the actual fruit of the jackfruit. You can find it at most Asian markets, I've also seen it in the frozen section of health foods stores, as well as at some grocery stores such as Publix too. I did a #weirdfruitwednesday on it over on my Instagram if you want to learn more about it! Young jackfruit, the type of jackfruit featured in this recipe is not sweet like the other kind. Young jackfruit has a much more meaty texture, and a mild flavor; it is such a great meat substitute. These jackfruit enchiladas wouldn't be complete without it! Regardless, I love both types so you will definitely see more content that uses jackfruit!
Healthy vegan recipes vs. unhealthy vegan recipes
To go off my last point, not only is jackfruit trendy, but a vegan diet is too. There are millions of vegan recipes online, and many vegan enchilada recipes. However these recipes (for the most part) all contain unhealthy super processed ingredients. I am passionate about creating recipes that are free of unhealthy ingredients and filled with nourishing whole food plant based ingredients, such as young jackfruit. These jackfruit enchiladas feature other superstar ingredients too!
A difference you may see when you are searching for healthy vs. unhealthy recipes online is that healthy recipes will typically have a longer ingredient list., whereas unhealthy recipes have a few super processed ingredients. This is actually a good thing, because unlike unhealthy vegan recipes, you can see everything that is going into your food. For example these jackfruit enchiladas feature a homemade enchilada sauce. This sauce may be intimidating at first, but is actually super easy to make!
How to make these Jackfruit Enchiladas:
A huge reason I love this jackfruit enchiladas recipe is because of how simple it is! I'm all about simple recipes here (for the most part). Therefore whenever I have the chance to make a healthy plant based recipe like this, I'm all for it. Although this recipe does not take long to make, you can speed it up even more by using a pressure cooker. I love using my Ninja Foodi to cook my rice, because all I have to do is throw it in and let it cook for about 15 minutes!

I love this healthy vegan enchilada recipe, because it is full of healthy ingredients. I love it whenever I get the chance to make a recipe like this that is very much like the traditional version, but is made with just plants! Jackfruit enchiladas ingredients:
- Young jackfruit
- Kidney beans
- Pinto beans
- Brown rice
- Onions
- Garlic
- Bell pepper
- Jalapeño
- Tomatoes
- Chili powder
- Cumin
- Oregano
- Onion powder
- Vegetable broth
Jackfruit Enchiladas
Ingredients
The enchilada filling:
- 1 14 oz can young jackfruit
- ½ cup textured vegetable protein TVP
- 1 15.5oz can kidney beans
- 1 cup dried brown rice
- 1 onion
- 1 14.5oz can diced tomatoes
- 1 bell pepper
- 5 cloves garlic
- 1 tablespoon chili powder
- 2 teaspoon cumin
- 1 tablespoon nutritional yeast
The enchilada sauce:
- 1 teaspoon garlic powder
- 1 ½ teaspoon onion powder
- ½ teaspoon oregano
- ½ tablespoon nutritional yeast
- ½ tsp cumin
- 1 6oz can tomato paste
- 2 tablespoon chili powder
- 1 cup vegetable broth
- 3 tablespoon oat flour
Option toppings:
- avocado
- cilantro
- vegan yogurt
Instructions
- Preheat your oven to 375.
- Cook your rice according to package instructions.
- Make the enchilada sauce by simply whisking all ingredients together.
- Dice your onion, garlic, and pepper, and add them to a pan and sauté. Once cooked, add the tomatoes, jackfruit, TVP, cooked rice and spices. Mix until evenly combined. Cook for about 5 more minutes.
- Fill the tortillas with the enchilada filling and wrap up. Add to a baking dish and cover in enchilada sauce. Place in the oven and bake for 20-25 minutes. Remove and top with additional ingredients of your choice; serve and enjoy!
