This healthy peanut soba noodle pasta salad recipe incorporates Asian flavors and buckwheat noodles to create a delicious easy weeknight vegan dinner recipe. This recipe is perfect for vegan meal prep and anyone on a vegan high protein diet. This recipe is vegan, gluten-free, high fiber, oil-free, dairy free, and only takes 15 minutes or less!

I am excited to bring you a simple healthy recipe to get you back on track to your health and wellness goals! This peanut soba noodle recipe is my favorite recipe to make when I need to ease back into healthy eating after a bit of overindulging. This recipe uses buckwheat noodles (a gluten-free noodle!) which help make it feel like an indulgence, but is still loaded with healthy vegetables!

Are Soba Noodles healthy?

Asian food is by far my favorite cuisine. I just love the flavors so much. I also love the amount of healthy produce that is incorporated into every dish. Even if an Asian dish is not traditionally healthy, you can easily make it more nutritious by adding more produce. I still believe everyone is a bit scared of carbs still, because it was so integrated into our brains that pasta and potatoes are unhealthy, when they are not at all!

Asian cuisine obviously has a lot of noodle based recipes. For the longest time I saw these as unhealthy. However it wasn't until I went vegan that I realized that many of these noodle recipes were actually healthy. I didn't only realize that they were healthy, but I learned about so many new noodles, like soba noodles featured in this peanut soba noodle recipe. Soba noodles are noodles made from buckwheat. What is buckwheat? Buckwheat is a grain like seed that makes for delicious and healthy gluten-free food! Buckwheat works a little different than wheat, but is still delicious. Honestly I prefer soba noodles to wheat noodles. I think they hold onto sauces better, and that's why they are perfect for recipes like this Peanut Soba Noodles!

  • Broccolini
  • Edamame

  • Garlic powder

Peanut Soba Noodles

Ingredients
  

For the Noodles:

  • 1 package soba noodles
  • 2 crowns broccolini
  • 1 ½ cups edamame
  • 4 green onions
  • ⅓ cup chopped peanuts

For the peanut sauce:

  • ¼ cup peanut butter
  • 2 teaspoon liquid aminos
  • 1 tsp garlic powder
  • sesame seeds to top

Instructions
 

  • Begin by cooking the soba noodles according to package instructions.
  • While the noodles are cooking steam the broccolini.
  • In a bowl combine the peanut butter, sesame oil, liquid aminos, garlic powder, and ¼ cup of water and mix until combine.
  • Strain the noodles and the broccolini and add to a bowl with the edamame. Mix in the peanut sauce, and top with green onions, chopped peanuts, and sesame seeds. Enjoy warm or cold!
