It is so fun to create fun treats just like this vegan coconut tapioca pudding throughout the entire season. Vegan Halloween treats can be difficult. A lot of them require artificial food coloring, which is something I never use. Thankfully this plant based Halloween recipe is not only free of those ingredients, but loaded with superfoods!
Superfood food colorings for coconut tapioca pudding:
Artificial colors are some of the worst ingredients you can consume. Many artificial colorings are full of harsh chemicals and things such as crushed beetles (yep, disgusting). Needless to say, I do not ever consume artificial colors. How do I still create fun colorful vegan treats? Plants of course! Not just any plants though, superfoods! I'll admit I am a bit late to the coconut tapioca pudding world. Normally if make pudding I make chia seed pudding (check out my Chocolate Caramel Chia Seed Pudding). I love chia seed pudding, but I get that it is not for everyone. Thankfully this tapioca pudding recipe is the perfect plant based Halloween treat to make instead! Tapioca is actually super easy and quick to make. Whereas chia seed pudding has to sit for quite some time. The major difference is that chia pudding is raw vegan, and tapioca is not.
To make the most delicious coconut tapioca pudding, you need to make sure you are buying quality tapioca pearls. I made the mistake of buying cheap tapioca pearls the first time I made tapioca pudding and it turned out to be more like tapioca sludge. It may take a bit longer to cook, but I promise it'll be worth it for this plant based Halloween treat!
How to make this plant based Halloween treat healthy:
Like I previously said, coconut tapioca pudding is nothing new. However a majority of these recipes are made with refined sugars and super high fat foods. I wanted to make this tapioca pudding recipe low fat and naturally sweetened. In order to do this I used lite coconut milk (which is basically watered down coconut milk (less fat, same amount of flavor)) and date syrup! I love using date syrup for recipes like this plant based Halloween treat recipe, because it adds sweetness while also adding nutrients and fiber!
What fruit is in this plant based halloween dessert?
You may be looking at this coconut tapioca pudding going "what the hell is that fruit". If you follow me on Instagram, then you know how much I love my weird fruits (#weirdfruitwednesday). This "furry" looking fruit in this recipe is Rambutan! Rambutan is such a sweet and delicious fruit, I love using it for smoothie bowls and just straight snacking! You can find it at Whole Foods and even local grocery stores.
Ingredients for this Coconut Tapioca Pudding:
- Lite coconut milk
- Almond milk
- Tapioca pearls
- Date syrup
- Vanilla extract
- Rawnice charcoal powder
- Frozen raspberries
- Fresh fruit
Coconut Tapioca Pudding
Ingredients
- 1 ½ cups almond milk
- 1 can lite coconut milk
- ½ cup tapioca pearls
- 1 tablespoon date syrup
- 1 teaspoon vanilla extract
- 2 teaspoon Rawnice Charcoal Superfood Powder
- 2 cups frozen raspberries
- fresh berries
Instructions
- Add the tapioca pearls to the almond milk and let soak for 30 minutes.
- Once the tapioca pearls absorb the water, remove from heat and let cool in the fridge.
- The filling is simply defrosted raspberries smashed up! Layer the tapioca pearls and raspberry filling and let chill. Top with berries and rambutan and Enjoy!
