Today's recipe is one of my favorites: Vegan Creamy Wild Rice Soup. I have definitely been on a soup kick recently, but hey that's what cold weather is for! Before I was vegan I really wasn't into soup that much, but that was because I wasn't aware of all the varieties out there! One of the greatest things about going vegan was discovering so many new cuisines and foods. Before I was vegan I ate the same foods so often; food was boring. However, now food brings me so much happiness, because there are endless ways to enjoy it! Here are some of my favorite "vegan food" recipes I discovered after going vegan:
Why I love this Vegan Creamy Wild Rice Soup:
The first and most important reason as to why I love this soup so much is that it is delicious! This vegan wild rice soup is one of those recipes where you just keep going back for seconds, because it's that good! Normally this may not be the best thing, because many servings can lead to weight gain. However since this recipe is a soup, it is naturally lower in calorie density. I talk all the time about how I am a volume eater, so I need large servings to satisfy my eating habits. I have found soups and salads to be the best solution to this! Last, but not least, this recipe is packed full of healthy whole foods plant based ingredients making it a nutrient dense soup recipe!
Is this vegan wild rice soup instant pot friendly?
I constantly talk about how obsessed I am with my Ninja Foodi (basically an instant pot and airfryer put together). It is seriously used almost everyday. I am happy to say that is vegan creamy wild rice soup is perfect for all pressure cookers! I actually prefer making this recipe in the pressure cooker, because I can add everything and work on other things while it cooks. If you don't like cooking I definitely recommend investing in the Ninja Foodi!
Is this a good meal prep soup?
I absolutely love meal prepping. Anyone who says leftovers are gross is tripping! Dare I say food taste better the next day (with a few exceptions). Not every soup recipe out there makes for a good meal prep soup, but this vegan creamy wild rice soup is perfect for healthy vegan meal prep. I love meal prepping this soup, because the rice absorbs all the flavor, and doesn't get super soggy.
Ingredients for this vegan creamy wild rice soup:
- Vegetable broth
- Onion
- Garlic
- Carrots
- Mushrooms
- Celery
- Lite Coconut milk
- Wild rice
- Kale
- Italian seasoning
- Nutritional yeast
- Miso paste
Vegan Creamy Wild Rice Soup
Equipment
- 1 Pressure Cooker optional
Ingredients
- 4 cups vegetable broth
- 1 onion
- 3 carrots
- 1 container mushrooms
- 1 ½ cups chopped celery
- 1 can lite coconut milk
- 1 cup wild rice
- 3 cups kale
- 1 tablespoon Italian seasoning
- 2 tablespoon Nutritional yeast
- 1 teaspoon Miso paste
Instructions
- Begin by chopping your onions, garlic, celery, and carrots. Sauté in a pot with a little vegetable broth.
- Slice the mushrooms and add to mix.
- Once vegetables become soft, add remaining ingredients and cook on medium-low for 20 minutes, ensuring the rice has cooked.
- Serve with bread and enjoy!
