This healthy vegan artichoke salad is loaded with Italian flavors and warm vegetables. This is a simple sheet pan meal that can also be meal prepped, and is budget friendly! This recipe is vegan, gluten-free, high protein, refined sugar-free, dairy-free, and high fiber!

I may be a bit biased, but this Roasted Tuscan Salad is the best artichoke salad recipe out there. Growing up I was never a huge artichoke fane. My mom would make recipes using them and I would pick around the. This is so crazy to me now, because I am obsessed with them! I truly can not get enough of artichokes, they are so buttery and delicious! I have a lot of recipes using artichokes, so if you are a fellow artichoke lover, you're going to want to check them out! Why make this artichoke salad:

This artichoke salad recipe is a little different than other salad recipes on my blog because it is roasted. This Roasted Tuscan salad is unique, because it is a warm salad. I've recently been eating warm salads, and I am hooked! Don't get me wrong, I love a good crunchy cold salad, but let's be real we need to switch it up from time to time. This roasted salad is a great salad for dinner as well, because it feels like a dinner. If you're like me then you know that a cold salad just doesn't hit the same as a warm dinner. I love eating hearty meals for dinner. Unfortunately hearty meals are not always the healthiest. If you're looking for more recipes to eat for a healthy dinner, than this Tuscan salad is for you!

Summer is for salads, and nobody can change my mind. I eat salads everyday during the summer. They are just so refreshing and nutrient rich. My body definitely craves more produce throughout the summer, so recipes like this artichoke salad are perfect for fueling my body with the best! There are a couple things to remember when making a summer salad. First of all, make sure that you are using seasonal vegetables. I love using seasonal produce, because it is more affordable and more nutrient rich. Second, make sure that it is hydrating. During the summer our bodies need more fluids, so it is important to use ingredients that are full of water! Last, but not least, make sure that it is easy to make! It's hard to eat healthy sometimes because the recipe can be complicated. To ensure you're eating healthy, make sure to look for easy recipes like this Roasted Tuscan Salad!

How to make this Roasted Tuscan Salad:

Like I previously touched on, easy recipes are the move for summer time. Luckily for you, this artichoke salad recipes is super simple! All you need is a baking sheet and silicone baking mats! I am obsessed with how simple and easy this Roasted Tuscan Salad is. If you are interested in meal prepping this salad, or bulking it up you could add some brown rice to it. This would make the salad more like a Buddha bowl (which you guys know I love!). However you make this salad, I can guarantee it will be super simple!

Ingredients for this Roasted Tuscan Salad:

  • Chickpeas
  • Artichokes
  • Red onion
  • Cherry tomatoes
  • Romaine
  • Basil
  • White wine vinegar
  • Italian seasoning
  • Garlic powder
  • Cold pressed flaxseed oil

Equipment

  • 1 Baking sheet
  • 1 silicone baking mat

Ingredients
  

  • 1 box cherry tomatoes
  • 1 red onion
  • 1 can chickpeas
  • 2 cans quartered artichoke hearts
  • 3 heads romaine
  • 1 handful fresh basil
  • ¼ cup white wine vinegar
  • 1 tablespoon cold pressed flax seed oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • black pepper

Instructions
 

  • Begin by preheating your oven to 400. Strain and rinse the artichokes and chickpeas, place on the baking sheet. Add the tomatoes. Cut the onion into half moons and add to the pan. Sprinkle with garlic powder and black pepper and bake for about 25 minutes.
  • Wash the romaine and chop. Add to a large bowl. Chop the basil and add.
  • Make the dressing by combining remaining ingredients and whisk together.
  • Remove vegetables from the oven and add to the salad. Toss in dressing and serve, enjoy!
