I have finally weened myself off the holiday food, and am ready to get back to eating the whole foods plant based diet that makes me feel so good! Today's tofu poke bowl recipe is one of my favorite foods to pick up when I am eating out: poke! I discovered poke about two years ago, and I instantly fell in love, because it was a dish that was so easy to order vegan. I loved everything about it, well except for the price! Poke bowls were about $15 per bowl, granted the servings were huge, but still $15 per meal is a little too much for me.
As I examined the poke bowl I realized that I could totally make this at home, and for a fifth of the price(if that honestly)! That's how this sweet ginger tofu poke bowl was born! It always blows me away just how affordable it is to eat plant based. A lot of allergen friendly food gets a bad rep as being super expensive, but honestly when you eat these whole food plant based ingredients it is so affordable, you don't have to eat the fancy stuff to stick to your diet/lifestyle! Oil-free vegan poke bowl sauce:
Making this vegan poke bowl oil-free was a little difficult. It definitely took some trial and error, because I needed something to thicken up the sauce: enter sunflower lecithin . I have just recently discovered sunflower lecithin, and I am obsessed! Sunflower lecithin has tons of health benefits that you can read about here.
I never knew this. I always thought it was just used as a thickening agent on processed foods, but it turns out it contains necessary nutrients and is a super healthy oil-free substitute. With the help of this ingredient I was able to create a healthy plant based poke bowl sauce that was 100% oil-free! The sauce is such a key part of this tofu poke bowl, and I definitely recommend making it, because it ties the sweetness of the pineapple and the zing of the ginger together for the ultimate vegan poke bowl.

Sweet Ginger Tofu Poke Bowl
Equipment
- 1 Pressure Cooker optional
Ingredients
For the Bowls:
- 1 cup dried brown rice or sushi rice
- 1 pineapple
- 1 english
- 1 block tofu
- 2 cups edamame
- 3 carrots
- 1 cup sprouts
- sushi ginger
- sesame seeds
For the Sauce:
- ¼ cup coconut aminos
- 2 teaspoon rice vinegar
- 2 teaspoon grated ginger
- 1 teaspoon garlic powder
- 2 tablespoon date syrup
- 1 tablespoon sunflower lecithin
Instructions
- Begin by cooking your rice and setting aside to cool.
- Dice your pineapple and tofu, shred your carrots, and cut your cucumber into half moons.
- In a blender combine all your dressing ingredients and blend until smooth (can hand whisk this).
- Assemble your bowl and top with ginger and sprouts, cover bowl with dressing and top with sesame seeds, enjoy!
