2 Ingredient Vegan Caramel

This healthy 2 ingredient vegan caramel recipe is incredibly easy to make, and well, only requires 2 ingredients! If I had to name one food that I missed the most since becoming a whole foods plant based vegan, it would probably be caramel. There are so many vegan caramel recipes out there, but a lot of them are loaded with refined sugars. This recipe on the other hand is naturally sweet (sweetened with fruit!).

This recipe has actually been one that I have been making for years, but I never thought that it would be a blog post worthy recipe. Then I realized half the time I visit blogs is for quick little recipes such as this 2 ingredient vegan caramel. I am working on creating a bunch of simple recipes for sauces and vegan meats and such and will be sure to update you all on when those recipes will be shared. Why make this 2 ingredient vegan caramel?

Aside from the fact that this recipe is absolutely delicious, it is also super healthy (as are all my recipes). It’s no secret I love desserts, I mean that’s why I have so many dessert recipes on my blog. I have to say that caramel desserts are my absolute favorite, it just goes with so many flavors! As I have been building my blog, and adding tons of recipes, I wanted to make sure that some of my staple recipes were up. I figure I make them all the time, so I am sure someone out there will enjoy them as much as me. I have other staples such as my Cream Cheese Frosting that are perfect for vegan baking! This 2 ingredient vegan caramel is definitely a staple. It’s easy, healthy, and customizable.

What do I mean by customizable? Well, you see you can this recipe a couple different ways. If you want a thick pliable caramel like the one seen in the photo, then follow the recipe as is. However if you want a melty caramel sauce like the one seen below then simply sub out the whole dates and whole cashews for date syrup and cashew butter – “VEGAN10” for $10 off.

Can I make this caramel without a high high speed blender?

Listen, I just recently joined the Vitamix gang, so believe me I understand the struggle. I am happy to say that you can make this recipe using a regular blender, it just might take a little more patience. It is crucial however if you are using a regular blender that you soak both the dates and cashews. I have tried it both ways, and it truly makes such a difference.

  • Soak the cashews and pitted dates overnight.
  • Strain the dates and cashews (save the water for smoothies!), add to high speed blender and blend on medium until smooth! Enjoy!
