Can I use canned sweet potato purée?

Yes, and it's what I reach for most of the time. Just make sure you're buying plain purée and not sweet potato pie filling, which already has sugar and spices in it.

What if I don't have an espresso machine?

Strong brewed coffee works. Use about a third of a cup of very strong coffee, or a double shot from a moka pot or an Aeropress, and cool it slightly before pouring it over the ice.

Why is my cold foam runny?

It's almost always the cream. Low-fat plant milks won't hold air, so you need a vegan half-and-half or full-fat coconut cream for the foam to stay on top. Cold cream helps too.
