How To Make Single Serve Baked Oats:
I live alone, so I am a sucker for a good single serve recipe. I personally prefer single serve breakfast recipes, because I find that even if you are living in a full house, people are picky about breakfast. Therefore single serve recipes like this lemon blueberry oatmeal bake are perfect, because everyone can find something they like.
However making single serve recipes can be a bit tricky. It's always hard to gage the proper proportions when you're changing the measurements of an existing recipe. For example who can measure out ⅘ a cup of oat flour.
Luckily this lemon blueberry baked oatmeal recipe is right in the middle and can easily be made for a crowd, or single serve. The recipe is made for 2, but can easily be halved, or doubled to suit your needs.
How To Naturally Sweeten This Lemon Blueberry Oatmeal Bake:
This lemon blueberry oatmeal bake is the perfect healthy plant based breakfast, because it is made with whole foods plant based ingredients. For me it is super important that the first meal of the day is made up of really wholesome ingredients.
Growing up my breakfasts looks like a very standard American breakfast. Super processed cereals, greek yogurt loaded with sugar, or oatmeal that was full of sugar. Luckily this lemon blueberry baked oatmeal recipe is free of all refined sugars.
I used date sugar for these oats. Date sugar is one of my favorite go-to natural sweeteners, because it is super natural. It is made from dates! Unlike many other sweeteners out there it does not undergo lots of processing. Date sugar is simply just ground up dates.
Therefore all the fiber and nutrients stay in tact. This is great for breakfast recipes, because it won't leave you feeling sluggish at all. Since date sugar also contains fiber, it will keep you full for much longer.
Why I Love This Blueberry Lemon Baked Oatmeal:
Lemon flavored desserts have to be one of my all-time favorite flavors. I especially love the sweet and tart combination of lemon and blueberry together. Needless to say I am obsessed with these lemon blueberry baked oats.
However my love for this lemon blueberry oatmeal bake goes beyond the flavor, or the healthiness. I love these blueberry lemon baked oats, because they are easy to make, can be prepped, and because it is super affordable!
Making this lemon blueberry baked oatmeal is as simple as combining the ingredients and baking for about 25 minutes. If you're like me and you love quick breakfast recipes this may not be appealing to you. However this leads me to the second reason I love these oats: they can be prepped.
This lemon blueberry oatmeal bake can be made ahead of time and be prepped and ready to go. Prepping these baked oats is as simple as baking them and covering in the fridge. If you plan to store these oats in the fridge for more than one day, I would suggest making them in a large dish.
I would suggest making a much larger batch, baking in a 8x8 dish, and cutting into squares. I would then recommend placing in an air tight container. This will help the oatmeal to be moist and fresh!
Lastly, these lemon blueberry baked oats are very affordable to make. The only ingredient that is a bit pricy is the date sugar. However the date sugar is key to making this recipe healthy. Since this recipe does not require a lot of date sugar, it works out to not be expensive if you already have date sugar on hand.
I use date sugar all the time. I definitely recommend investing in some. It is so versatile!
