Making this lemon blueberry baked oatmeal is as simple as combining the ingredients and baking for about 25 minutes. If you're like me and you love quick breakfast recipes this may not be appealing to you. However this leads me to the second reason I love these oats: they can be prepped.
This lemon blueberry oatmeal bake can be made ahead of time and be prepped and ready to go. Prepping these baked oats is as simple as baking them and covering in the fridge. If you plan to store these oats in the fridge for more than one day, I would suggest making them in a large dish.
I would suggest making a much larger batch, baking in a 8x8 dish, and cutting into squares. I would then recommend placing in an air tight container. This will help the oatmeal to be moist and fresh!
Lastly, these lemon blueberry baked oats are very affordable to make. The only ingredient that is a bit pricy is the date sugar. However the date sugar is key to making this recipe healthy. Since this recipe does not require a lot of date sugar, it works out to not be expensive if you already have date sugar on hand.
