This lemon kale salad is the perfect energy boosting superfood salad to enjoy on a hot summer day. It is super simple to make and only takes a few ingredients. This salad recipe is: vegan, oil-free, gluten-free, high protein, and low calorie!

I am so excited to share today's lemon kale salad recipe with you all! If you're a weekly reader, then you know how much I love a good kale salad. I honestly it's the best green period, and definitely the best for salads. While I don't discriminate, and I love all greens and salads, kale salads might take the cake. I especially love making kale salads during the winter, because kale is in season and therefore affordable. Another reason to love is because it's the perfect way to eat healthy salads in the winter. I have plenty of winter salads and kale salads on my blog.

How to make kale taste good:

Listen, I get it. Kale is not for everyone. However I believe that most people are not preparing their kale properly and that is why it's not tasting as good. First things first before even preparing your kale, you need to wash it. I give all my produce a major wash right when I get home from the grocery store, and I strongly advise you to as well. You'd be amazed at what comes off your produce. Next make sure to massage the kale. You can do this with a healthy cold pressed oil, or for an oil-free version you can massage an avocado with it like I did in this recipe. It can get a bit messy, but I promise it is worth it. Last, but not least incorporate an acidic dressing. I love making vinaigrettes, or simply using lemons like I did in this lemon kale salad.

Does this Lemon Kale Salad recipe keep in the fridge?

This lemon kale salad recipe is the perfect salad to eat for healthy meal prep. Like I said earlier, I love using kale for meal prep friendly salads. One major reason is because it actually keeps in the fridge. Other lettuces used in salads can become soggy when left in the fridge, but kale will stay fresh for days! It will keep especially well if you use an acidic dressing such as the one used in this lemon kale salad.

Because kale is such a great green to store in the fridge, I find that it is the ultimate base for meal prep friendly salad recipes. I love meal prepping, because I am always on the go. Therefore rarely do I have time to make lunch fresh everyday. This lemon kale salad recipe is perfect, because I can make a weeks worth of it and store it ready to eat for each day.   • Kale
  • Sunflower seeds
  • Cannelloni beans
  • Avocado
  • Lemons

Ingredients
  

  • 1 bunch kale
  • 2 avocados
  • 2 lemons
  • 1 15.4oz can cannellini beans
  • ¼ cup sunflower seeds

Instructions
 

  • Begin by washing your kale and de-stemming it. Add to a large bowl along with 1 avocado and the lemon juice. Massage the avocado into the kale, making sure everything is coated evenly.
  • Strain and rinse the beans, and add to the salad along with the sunflower seeds. Dice the second avocado and add to the bowl. Toss, serve, and enjoy!
