Okay, I'll admit: I've been on a bit of a kale kick recently. It's just such an amazing green. Obviously kale is loaded with nutrients, I think we all know that by now. Honestly though, that's not my favorite part about it (I mean, it does help!), I love how well kale holds up. Kale is the perfect green to make salads with because: it holds onto the dressing super well, and it keeps in the fridge, making it the perfect meal prep salad. This roasted kale salad may be one of my most meal prep friendly recipes ever, because all of the vegetables keep in the fridge for like, ever! Is this Roasted Kale Salad whole foods plant based?
It sure is! This roasted kale salad recipe is made with purely plants. All of my recipes are made with plant based ingredients. However this recipe is made from ingredients that are the purest of pure, meaning you could essentially get them all from your garden and make this salad (goals right!?). I love making salads like this, because they remind me how wonderful nature is, and that we really have everything we could ever need!
How to make the best kale salads:
There are a couple key things you need to do to make a proper kale salad. First, you MUST massage your kale. I swear it is so important to massage your kale (also washing, so so so important!), because it makes it so much more enjoyable to eat. Next make sure your vegetable chunks are bigger than your kale. This is important, because you don't want to be chewing a big mouthful of kale. Last but not least make sure your salad has a good crunch. I love the GoRaw sprouted seeds! You could use any, but honestly I am obsessed with these!
Roasted Kale Salad

Ingredients
For the salad:
- 1 bunch kale
- 1 head cauliflower
- 3 carrots
- 1 red onion
For the dressing:
- ¼ cup tahini
- 1 lemon
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ¼ cup water
Instructions
- Begin by preheating your oven to 400.
- Roughly chop the cauliflower, carrots, and red onion. Place in the oven and bake for 25 minutes.
- Wash and prepare your kale into bit sized pieces. Make the dressing by whisking together all ingredients. Massage the dressing into the kale.
- Add roasted vegetables to the salad, serve and enjoy!
