I am back again with this white bean kale soup! Summer may be right around the corner, but my body is still craving soup recipes, so I figured let me get one more in! I love eating soups, because they're filling and packed full of vegetables, and yet are still low(ish) in calories! While I do love salad recipes, I can get sick of eating salads (especially if they're meal prepped) over and over again. However for some reason I don't get like this with soup. This white bean kale soup recipe is incredibly easy as is. However if you are looking for a quick andeasy way to make this recipe, then you can make it in a pressure cooker! That's right all my Instantpot and Ninja Foodi lovers out there (myself included), this white bean kale soup recipe is for you! You can simply combine all ingredients in the pressure cooker and pressure cook for 15 minutes. It's that simple!

I have said this before, and I will say it again: just because a recipe is vegan, does not automatically mean that it is healthy. I am a strict vegan, and believe that the world should go vegan, and that a vegan diet is by far healthier than a standard American one. However there are endless vegan junk foods out there. Things labeled as healthy cheese, or healthy vegan butter drive me crazy. Why? Because they are loaded with saturated fats and highly processed oils, which are proven to be bad for your health.

- Cannellini beans
- Russet potatoes
- Celery
- Carrots
- Kale
- Onion
- Garlic
- Vegetable broth
- Tomato paste
- Dairy-free milk
- Tahini
- Nutritional yeast
- Thyme
- Oregano
- Rosemary
White Bean Kale Soup
Equipment
- 1 Pressure Cooker optional
Ingredients
- 2 15.4oz cans cannellini beans
- 2 russet potatoes
- 1 cup celery
- 3 carrots
- 1 bunch kale
- 5 cloves garlic
- 1 onion
- 4 cups vegetable broth
- 1 tablespoon tomato paste
- 1 cup Plant based milk of choice
- 2 tablespoon tahini
- 3 tablespoon nutritional yeast
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon rosemary
Instructions
- Begin by chopping your celery, carrots, onions, and garlic. Add to your pot with a ¼ cup water. Once vegetable mix has cooked down, add the tomato paste, then potatoes and kale (you may need a little extra water here).
- Add the vegetable broth, tahini, non dairy milk, nutritional yeast, and herbs and cover for about 10 minutes.
- Lastly, add the cannellini beans and stir. Cover and let cook for 15 minutes on low. Serve and enjoy!
