I am back again with this white bean kale soup! Summer may be right around the corner, but my body is still craving soup recipes, so I figured let me get one more in! I love eating soups, because they’re filling and packed full of vegetables, and yet are still low(ish) in calories! While I do love salad recipes, I can get sick of eating salads (especially if they’re meal prepped) over and over again. However for some reason I don’t get like this with soup. Is anyone else like this, or is it just me? Either way I love eating soup and creating healthy soup recipes for you guys. I am always uploading more content (every Tuesday and Thursday), so you can count on more soup content coming! If you’re looking for more soup recipes right now, I would suggest trying out some of my other soup recipes.
My go-to vegan soup recipes:
How to make this White Bean Kale Soup in a pressure cooker:
This white bean kale soup recipe is incredibly easy as is. However if you are looking for a quick andeasy way to make this recipe, then you can make it in a pressure cooker! That’s right all my Instantpot and Ninja Foodi lovers out there (myself included), this white bean kale soup recipe is for you! You can simply combine all ingredients in the pressure cooker and pressure cook for 15 minutes. It’s that simple!
Having a pressure cooker has honestly changed my life. Both because it helps me make simple recipes and saves me time in the kitchen. This white bean kale soup is the perfect soup to make when you don’t feel like cooking, or don’t have time to. I seriously am obsessed with how simple this recipe is, and not to mention nutritious and delicious!
Is this vegan white bean kale soup healthy?
I have said this before, and I will say it again: just because a recipe is vegan, does not automatically mean that it is healthy. I am a strict vegan, and believe that the world should go vegan, and that a vegan diet is by far healthier than a standard American one. However there are endless vegan junk foods out there. Things labeled as healthy cheese, or healthy vegan butter drive me crazy. Why? Because they are loaded with saturated fats and highly processed oils, which are proven to be bad for your health.
Luckily for you, every single recipe here at The All Natural Vegan was created to not only be free of all the bad stuff, but to also be loaded with health promoting ingredients, just like this white bean kale soup. This soup is loaded with superfoods like beans and kale, while also being free of processed ingredients. It is the perfect healthy vegan soup recipe! If you are looking to pump up the nutrition density of this soup recipe there are plenty of ways to add even more nutrition to your recipes. One of my favorite tricks for adding extra vitamins and minerals to my recipes is to sprinkle extra herbs on top. Although recipes like this soup are loaded with herbs already, but a little extra flavor never hurt anyone!
