If you are not gluten-free, you can use any kind of lasagna sheet. If you want to make this recipe low-calorie, you can use heart-of-palm lasagna noodles as well.

How To Make The Best Vegan Lasagna Soup:
This vegan lasagna soup recipe is my favorite one-pot vegan meal. It's filling, it's easy to make, healthy, and most importantly, it's delicious.
- Saute Vegetables:
- In a large pot, sauté diced zucchini, diced mushrooms, chopped onion, and minced garlic in olive oil (if using) until softened.
- Create Tomato Base:
- Add vegetable broth then diced tomatoes, tomato paste, and tomato sauce to the pot. Mix well.
- Add Spices:
- Stir in garlic powder, smoked paprika, nutritional yeast, and Italian Seasoning for additional flavor.
- Add Lasagna Noodles:
- Break up the lasagna noodles into small pieces and add an additional 2 cups of water to the pot. Set the heat to medium heat and allow the broken lasagna noodles to cook until al dente.
- Incorporate TVP:
- Once you have tender noodles, add the TVP to the soup. It doesn't take long to cook and only needs a few minutes to absorb liquid and flavor. Once incorporated, turn to low heat and allow to simmer for 15 minutes.
- Prepare Tofu Ricotta:
- In a blender, combine the extra firm tofu, slivered almonds, sea salt, and nutritional yeast and blend until a smooth ricotta cheese texture has been achieved.
- Serve:
- Spoon the Homemade Vegan Ricotta Cheese on top of individual servings of the soup. Serve and enjoy!
Hint: You may need to add more or less water to the soup to achieve tender lasagna noodles. Start with 2 cups of water and add more if needed.

- Blender: You will need a blender to create the tofu ricotta. I recommend using a high-speed blender, however, any blender will work.
- Wooden Spoon or Cooking Utensils: These will help you stir the soup and make sure nothing sticks to the pot.
- Measuring Cups and Spoons: Accurate measurements are important when adding seasonings and ingredients, so have measuring cups and spoons on hand.
- Soup Bowls and Ladle: For serving the finished soup, you'll need soup bowls and a ladle to portion it out.

I recommend storing this vegan lasagna soup in an airtight container. This will ensure it stays fresh. If stored properly, this soup will keep for a full week. This soup can also be frozen and reheated. If frozen and reheated, make sure it is in an airtight container. It will stay fresh for up to two months in the freezer.
Top Tip:
If you are looking for a lower-calorie soup, I recommend only using half a box of noodles. There are plenty of vegetables in this soup, therefore if you want to eat more for fewer calories, only use half the noodles.

- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 ½ tbsp Italian seasoning
- 1 box lasagna noodles
- 2 cups water
- ⅔ cup textured vegetable protein
For the Tofu Ricotta:
- 1 block extra firm tofu
- ⅓ cup slivered almonds
- 1 tablespoon nutritional yeast
- ½ tsp sea salt
