Today I have another vegan soup recipe for you all with this Vegan Lasagna Soup! It's no secret that I love a good soup. There are so many wonderful things to love about soup, I don't understand how some people are not fans of it. Soup is such a simple way to incorporate more plant based ingredients into your diet; yay for plant diversity! The best part is it doesn't taste like it's healthy! Unlike salads, soup is warming and comforting making it the perfect healthy recipe for winter.
Not only is the flavor of this vegan lasagna soup just *chefs kiss*, but this vegan soup recipe is so simple it's insane. This vegan lasagna soup is instant pot friendly and takes less than thirty minutes to make. This soup has quickly become a staple in my kitchen. Even with my recipe developing schedule I still find ways to make this recipe multiple times throughout the month, because it is just that damn good! My recipes are like my children, so I can't pick a favorite. However I'll let you know some other recipes like this vegan lasagna soup that I just keep going back to time after time. These are some of my vegan staple recipes:
- Buffalo Cauliflower Salad
- Tempeh Banh Mi

Why make this Vegan Lasagna Soup:
I feel like the answer to this is obvious, but here I go: this vegan lasagna soup has all the delicious flavor of homemade lasagna without all the work. Real talk, I have been trying to make homemade lasagna forever, but I just do not have the skills. Maybe one day I'll have a traditional vegan lasagna recipe, but that day is not today. Honestly though, I haven't even thought about making regular lasagna since making this recipes, because I'm just that obsessed.
How to make Healthy vegan ricotta:
There are plenty of brands that make vegan ricotta, and there's plenty of other vegan ricotta recipes out there. However many of these recipes use highly processed oils and flavoring to make the cheese, or they're just flat out expensive! This healthy vegan ricotta is non of those. This vegan lasagna soup recipe wouldn't be complete without this healthy vegan tofu ricotta. To make it, all you need is a high speed blender. I frequently recommend investing in a Vitamix. I honestly use mine like at least twice a day, and it's honestly changed the quality of my food so much. If you're committed to making healthy whole foods plant based recipes, I really think it's worth it!
Vegan food for non vegans:
The struggle of getting your non vegan friends and family to eat vegan is hard. I have a huge family and I am the only vegan, so it's a bit challenging trying to find ways to make food that they'll like when they come over. There's definitely been a learning curve, but I think the key to success is making dishes that they are familiar with. I've noticed that making something like my chickpea curry doesn't always work out, because they're skeptical of trying curry in the first place. By serving recipes, or even things like wraps and sandwiches the non vegans are much more open. That's why this vegan lasagna soup works so well! Everyone knows and loves lasagna!
How to make this Vegan Lasagna Soup in the Instant Pot
This vegan lasagna soup is easy to make in a pot, but becomes even easier when made in a pressure cooker! I love my Ninja Foodi and use it almost everyday. I absolutely love making soups like this one in it, because I can just throw everything in the pot and go work on other things. My only suggestion if you choose to make this soup in a pressure cooker is to add an extra cup of water to ensure that the soup doesn't burn to the bottom.
How to make this soup low calorie:
This vegan lasagna soup is very healthy don't get me wrong. However whole wheat, or gluten-free pasta is usually pretty calorie dense. If you are trying to loose weight while not depriving your body and cutting out foods you like (such as this soup), try subbing out the lasagna noodles for: Hearts of palm lasagna noodles, or homemade zoodles! There are plenty of ways to eat lower calorie foods in a healthy way while still enjoying your favorite foods.
