This vegan lasagna soup is instant pot friendly and takes less than thirty minutes to make. This soup has quickly become a staple in my kitchen. Even with my recipe developing schedule I still find ways to make this recipe multiple times throughout the month, because it is just that damn good! This vegan lasagna soup recipe wouldn't be complete without this healthy vegan tofu ricotta. To make it, all you need is a high speed blender. I frequently recommend investing in a Vitamix. I honestly use mine like at least twice a day, and it's honestly changed the quality of my food so much. The struggle of getting your non vegan friends and family to eat vegan is hard. I have a huge family and I am the only vegan, so it's a bit challenging trying to find ways to make food that they'll like when they come over. I've noticed that making something like my chickpea curry doesn't always work out, because they're skeptical of trying curry in the first place. How to make this Vegan Lasagna Soup in the Instant Pot
This vegan lasagna soup is easy to make in a pot, but becomes even easier when made in a pressure cooker! I love my Ninja Foodi and use it almost everyday. I absolutely love making soups like this one in it, because I can just throw everything in the pot and go work on other things. My only suggestion if you choose to make this soup in a pressure cooker is to add an extra cup of water to ensure that the soup doesn't burn to the bottom.
How to make this soup low calorie:
This vegan lasagna soup is very healthy don't get me wrong. However whole wheat, or gluten-free pasta is usually pretty calorie dense. If you are trying to loose weight while not depriving your body and cutting out foods you like (such as this soup), try subbing out the lasagna noodles for: Hearts of palm lasagna noodles, or homemade zoodles! There are plenty of ways to eat lower calorie foods in a healthy way while still enjoying your favorite foods.

- Gluten-free lasagna noodles
- Zucchini
- Mushrooms
- Onion
- Garlic cloves
- Garlic powder
- Smoked paprika
- Vegetable broth
- Spinach
- Textured Vegetable Protein
- Diced Tomatoes
- Tomato paste
- Tomato sauce
- Miso paste
- Italian seasoning
- Extra firm tofu
- Slivered almonds
- Lemon
- Nutritional yeast
Vegan Lasagna Soup
Equipment
- 1 Pressure Cooker optional
Ingredients
For the Lasagna Soup:
- ½ box gluten-free or whole wheat lasagna noodles
- 2 zucchini
- 1 cup mushrooms
- 1 onion
- 5 cloves garlic
- 4 cups vegetable broth
- 1 cup frozen spinach
- ā cup textured vegetable protein
- 1 can diced tomatoes
- 1 small can tomato sauce
- 1 teaspoon miso paste
- 1 can tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 ½ tbsp Italian seasoning
For the Tofu Ricotta:
- 1 block extra firm tofu
- ½ cup slivered almonds
- ½ lemon
- 1 teaspoon miso paste
- 1 tablespoon nutritional yeast
- splash of plant based milk If needed
Instructions
- Begin by dicing your onions, and mincing your garlic.
- Dice the mushrooms and add to the pot. Cook for about 5 minutes.
- Roughly break up the lasagna noodles and add all remaining soup ingredients, and cook on medium for 25 minutes.
- While the soup is cooking make the ricotta by simply combining all ingredients together in a high speed blender and blending until smooth.
- To serve, simply place in a bowl and top with a big scoop of the tofu ricotta. Enjoy!
