I've been making this classic avocado toast on a weekly basis for years, and I truly think it's one of the best vegan meals you can make in under ten minutes. It is so satisfying, and a generous sprinkle of Shiso Miso Nooch adds a savory, umami-packed flavor that takes it to the next level. Alternatively, heat a large skillet over medium heat and toast the bread with vegan butter until both sides are golden brown and slightly crispy. This pan method gives you even more flavor and those irresistible crispy edges.
  • Add the Butter: If using a toaster, spread the vegan butter over the warm toast immediately so it melts right into the bread for a rich, savory base.
  • Prepare the Avocado: Slice the avocado in half, remove the pit, and scoop out the avocado flesh with a spoon. From here, you can thinly slice it for a more elegant presentation, or mash it in a small bowl with a fork for a creamy avocado spread. 
  • Assemble the Toast: Layer the avocado evenly over the warm, crunchy toast. Whether you go sliced or smashed avocado, spread it all the way to the edges so every bite is covered.
  • Add the Seasoning: Sprinkle the Shiso Miso Nooch generously over the top for a savory, umami-packed flavor. 
  • Finish With Microgreens: Top with microgreens to taste for freshness and texture.

Here are a few of my tips to make this vegan avocado toast turn out perfect every time.

  • Use a Perfectly Ripe Avocado: An unripe avocado will be hard and bland, while an overripe avocado with brown spots inside will be mushy and bitter. The perfect avocado gives gently under your thumb and is bright green inside. If yours is still firm, place it in a brown paper bag for a day or two; the ethylene gas it releases speeds up ripening.
  • Don't Skip the Vegan Butter: It sounds like a small thing, but spreading vegan butter on warm toast adds a richness that makes this feel like a complete meal rather than just a snack.
  • Season Generously: The Shiso Miso Nooch is where most of the flavor lives in this recipe, so don't be shy with it! 
  • Pan-Toast for Extra Flavor: If you have an extra two minutes, toasting the bread in a skillet with vegan butter over medium heat takes this from good to great. The result is extra golden, buttery, and deeply crispy in a way a toaster just can't match.

  • Add More Toppings: Tomato slices, red onions, a sprinkle of nutritional yeast, or even a drizzle of olive oil all make great additions, especially for lunch. This is truly one of those recipes where you can mix and match your favorite toppings and make it your own.
  • Make It High Protein: Add white beans or a side of my raspberry smoothie bowl to round it out into a more complete, protein-packed breakfast. Or pair it with a tofu scramble for a more hearty vegan breakfast spread.
