I couldn't be more excited for today's tofu salad sandwich recipe! A little fun fact about me and my vegan journey is that eggs were the last thing I gave up. Granted this did only take a few days after giving up dairy, but hey it has to count for something. I bring this up, because I know a good vegan egg recipe when I see one, and this tofu egg salad sandwich did not disappoint! Why choose this Tofu "egg" Salad Sandwich Recipe over regular egg salad sandwiches:
I assume most of you are vegans if you're on my site, but even if you're not, I would definitely recommend choosing this tofu "egg" salad recipe over a traditional egg salad. Why? Well, first off this recipe has zero cholesterol, and traditional egg salad is packed with cholesterol. I don't think I need to explain why eating less cholesterol is better for you.
This recipe also is loaded with healthy plant based protein. Eating more plant based protein is important, because it is less calorically dense than animal based, therefore it keeps you full just as long, and for less calories!

You guys know that I love meal prep friendly recipes, and this one passed the test! This tofu salad is totally meal prep friendly. I will say that it may separate a little in the fridge, but if you give it a little mix it will be just like new again! I strongly encourage you to invest in a tofu press, because it helps squeeze out the xtra water. This will help it to not separate as much.
I love this tofu salad sandwich recipe too, because it's easy to switch up. This helps so that I don't feel like I am eating the same thing every single day. To do this I will serve it in wraps, or just on a bed of spring mix. I love doing this because I love food, and it is so exciting to me. When I eat the same thing every day it takes away the excitement and I am left with a boring meal. I encourage you to make this recipe and try switching up how you serve it each day!

- Extra firm tofu
- Silken tofu
- Cucumber
- Celery
- Red onion
- Garlic
- Dill
- Chives
- Cumin
- Tahini
- Stone ground mustard
- Nutritional Yeast
- Lemon
- Gluten-free bread
- Spring mix
- Avocado
- Radishes
Tofu Salad Sandwich
Equipment
Ingredients
For the "egg salad"
- 1 block extra firm tofu
- 1 block silken tofu
- 1 cucumber
- 3 stalks celery
- ¼ cup diced red onion
- 1 clove garlic
- ⅓ cup dill
- ⅛ cup fresh chives
- ½ lemon
- 1 tablespoon tahini
- 1 tablespoon stone ground mustard
- 1 tablespoon nutritional yeast
- ½ teaspoon cumin
For the sandwich:
- 8 slices bread gluten-free
- 1 avocado
- spring mix
- radishes
Instructions
- Begin by pressing your extra firm tofu and setting aside while you prepare the rest of the recipe.
- In a high speed blender combine the silken tofu, lemon juice, tahini, mustard, nutritional yeast, cumin, and garlic and blend until smooth. Cut you dill and chives and add to the mix, do not blend further.
- Thinly slice and dice your onion, celery, and cucumber. Add to a bowl. Chop the pressed tofu into cubes and add to the bowl. Pour the sauce into the bowl and toss.
- Serve on toasted bread with mashed avocado, radishes, and spring mix, enjoy!
