Like I said in the intro, this recipe is more of a side salad. However, with some simple substitutions you can make this vegan arugula salad recipe a full meal. First things first, you need to add a bit of protein. My suggestion would be to add some peas or tempeh so that the salad is still raw vegan. Nest, add some nuts and seeds for some extra calories and a satiating factor. If you don't care if this salad is raw vegan or not, you could add a healthy gluten-free whole grain like quinoa too!

If you're new here, then you know I rarely use oils. I actually only use oil is my salads, and exclusively use cold pressed oils. Why only cold pressed? Well, first things first, stop heating your oil! When you eat oil it pretty much gets rid of all the healthy nutrients leftover, and just adds saturated fat and calories to your food. Cold pressed oil is never heated, so those nutrients stay intact. By choosing a quality cold pressed oil, you'll be getting an oil that is loaded with healthy Omegas too. - Arugula

- White wint vinegar
- Cold pressed Flaxseed oil
Arugala Snap Pea Salad
Ingredients
- 1 container arugula
- 2 cups snap peas
- 1 bunch radishes
- 1 ½ tablespoon cold pressed flax seed oil
- ¼ cup white wine vinegar
- black pepper optional

- Simply chop radishes, and combine all ingredients together in a bowl and toss. Add black pepper and enjoy!
