Most of my salad recipes are made to be salad meals. I love eating salads for lunch, so that's why most of the salads here at Theallnaturalvegan.com are loaded with goodies. However I always forget that a lot of people eat salads as an appetizer or a side salad.

I made this vegan arugula salad with three goals in mind: minimal ingredients, short cooking time, and affordable. Well friends, I did it! I accomplished this without sacrificing any flavor. Since arugula is already a flavorful green on its own, I knew that I wouldn't need to add much else to bring this salad to life. I added snap peas for some sweetness, and some radishes for some crunch, and ta da! Super easy, and honestly super beautiful.

Raw Vegan Salads:

Yes, this recipe is raw vegan approved! Since the oil is cold pressed and never heated, this vegan arugula salad recipe is raw vegan approved! I am not a raw vegan, but I do really enjoy eating raw vegan recipes. I think that it is super healthy to eat raw produce, because it is high volume, and low in calorie density. If you are interested in eating more raw vegan recipes, there's tons of healthy raw vegan recipes on my blog. Here are some of my top picks:

  • 2 Ingredient Vegan Caramel
  • Green Goddess Bowl
  • Winter Kale Salad
  • Peanut Ginger Asian Crunch Salad

How to make this Arugula Salad more filling:

Like I said in the intro, this recipe is more of a side salad. However, with some simple substitutions you can make this vegan arugula salad recipe a full meal. First things first, you need to add a bit of protein. My suggestion would be to add some peas or tempeh so that the salad is still raw vegan. Nest, add some nuts and seeds for some extra calories and a satiating factor. If you don't care if this salad is raw vegan or not, you could add a healthy gluten-free whole grain like quinoa too!

Why choose cold pressed oils?

If you're new here, then you know I rarely use oils. I actually only use oil is my salads, and exclusively use cold pressed oils. Why only cold pressed? Well, first things first, stop heating your oil! When you eat oil it pretty much gets rid of all the healthy nutrients leftover, and just adds saturated fat and calories to your food. Cold pressed oil is never heated, so those nutrients stay intact. By choosing a quality cold pressed oil, you'll be getting an oil that is loaded with healthy Omegas too. Therefore by choosing cold pressed oils you are avoiding the bad stuff, while also incorporating the good stuff, just like all my recipes! If you're looking for more recipes with cold pressed oils, I have quite a few:

  • Winter Kale Salad
  • Italian Barley Salad
  • Rainbow Kale Salad
  • Roasted Winter Salad
