I'm back with another high protein baked oatmeal recipe for you this week: Caramel baked oats. I hopped on this trend a little late. However, the baked oat recipes are coming in hot! I love baked oatmeal because it is super filling. I usually struggle with getting super hungry after breakfast, but these chocolate caramel baked oats help a lot.
As I continue to eat more baked oats like these caramel baked oats, I am truly amazed at the endless flavor options. You can create pretty much any dessert in baked oatmeal form. I filled these chocolate caramel baked oats with my 2 Ingredient Caramel , and it worked perfectly. The caramel melted in the oats, giving it that perfect warm decadent center. I think next time I'm gonna add a piece of chocolate to the caramel center just to give it a little something extra. This high protein baked oatmeal recipe is single serve, but you could easily make this recipe for more people in a larger baking dish, and I am sure it would come out just as well. In order to keep the same caramel filling I would just add random drops of caramel throughout the baking dish.

- ½ cup oats ground into flour
- 1 scoop PlantFusion Chocolate Caramel Complete Meal
- 1 tablespoon cacao powder
- ¼ teaspoon baking soda
- 1 cup Plant based milk of choice
- 1 tablespoon 2 ingredient vegan caramel
Instructions
- Begin by preheating oven to 350. Blend your oats into flour if you have not done so already.
- Combine all ingredients except caramel in an oven safe bowl and mix until combined. Scoop the caramel into the center and cover with the oats.
- Place in the oven and bake for 25 minutes. Serve and enjoy!
