This creamy homemade pumpkin seed milk is a delicious, budget-friendly, and nutrient-dense plant-based milk alternative, loaded with essential fatty acids, magnesium, zinc, and antioxidants. All you need is a high-powered blender or, better yet, use my favorite juicer, the Kuvings AUTO10 Plus, to make it all super easy and get the best creamy texture—vegan, refined sugar-free, oil-free, gluten-free, and nut-free.

This homemade pumpkin seed milk is a dairy-free, nut-free, and totally crave-worthy milk that's easy to make and delightfully versatile. It has a smooth texture, a unique flavor, and a touch of sweetness from Medjool dates. It all comes together with 5 simple ingredients, and it's one of the most delicious plant-based milks to enjoy as a creamy beverage or to add richness to both sweet and savory recipes.

I've been making a lot of homemade milks lately. This Creamy Homemade Sunflower Seed Milk and Homemade Hazelnut Milk were my latest creations, but this time I decided to try making milk with pumpkin seeds. I can't pick a favorite, but because they're so easy to make, especially with a Kuvings AUTO10 Plus juicer, it's fun to rotate between them. Once you taste this creamy, nutrient-rich pumpkin seed milk, it's hard to go back to store-bought.

Pour it into your morning coffee or swirl it into my Iced Gingerbread Latte, and you'll see exactly what I mean.

Besides the ultra-creamy texture and distinctive, lightly nutty flavor, what I love most is that it's completely free of gums, fillers, or mystery ingredients. Naturally sweetened with dates and made with just simple, good-for-you ingredients, this homemade seed milk is irresistible.

If you don't have a juicer, no worries, you can still make it using a high-speed blender and a nut milk bag (I include instructions in the recipe card below). Ingredients To Make This Pumpkin Milk: 

Here's what you need to make this nutritious milk.

  • Raw Pumpkin Seeds (Pepitas): These little green seeds are packed with grams of healthy fats, essential fatty acids, and a mild nutty flavor that makes for a creamy milk and a delicious, unique flavor.
  • Medjool Dates: They add a natural touch of sweetness and enhance the overall smooth texture without needing maple syrup or agave nectar.
  • Sea Salt: Just a pinch of salt balances the sweetness and highlights the nutty flavor.
  • Vanilla Bean Powder or Vanilla Extract: This gives the milk a cozy, almost pumpkin spice-like aroma.
  • Filtered Water: Using fresh water (filtered) ensures a clean, crisp taste and helps you control how rich or light you want your milk.

How To Make It:

Let me show you how super easy it is to make this plant-based milk alternative that's also nut-free.

Juicer Method:

This method ensures you extract every last creamy drop from your seeds.

  1. Soak: Soak pumpkin seeds and pitted Medjool dates in water overnight. Drain and rinse well-don't toss soaking water.
  2. Juice: Pour soaked pumpkin seeds, dates, and soaking water into the Kuvings AUTO10 Plus juicer. Add sea salt and vanilla.
  3. Store or Enjoy: Pour the milk into a glass jar or an airtight container and refrigerate. Shake before each use.

Blender Method:

If you don't have a juicer such as the Kuvings AUTO10 Plus, this method still works, but it may produce a bit less milk and won't be quite as smooth and velvety. 

  1. Soak: Soak pumpkin seeds and Medjool dates in water overnight. Drain water and rinse well-don't toss soaking water.
  2. Blend: Combine all the ingredients in a high-speed blender on full power until smooth.
  3. Strain: Squeeze as much liquid as possible using a nut bag or cheesecloth over a large bowl.
  4. Store & Enjoy: Transfer to a glass container and refrigerate.

Top Tips: 

Here are a few of my tips to make the best sunflower seed milk from the start.

  • Always Soak First: Softening the pumpkin seeds and dates makes them easier to blend or juice and gentler on digestion.
  • Use Room Temp Water: Soaking at room temperature speeds up the process. Cold water can slow things down.
  • Don't Discard Soaking Water: The soaking water absorbs some natural sweetness, and nutrients and it's added to the juicer for best results.
  • Adjust Thickness: For richer, creamier milk, use less water; for a lighter, more refreshing consistency, add more.
  • Make More: Double the recipe if you have a big household.

Variations And Substitutions: 

I want you to try the delicious, distinctive flavor of this pumpkin seed latte first. But after that, you should totally play around and make it your own. Here are a few simple suggestions.

  • Sweetness: Use maple syrup instead of dates for a different flavor vibe. Simply stir it in after juicing.
  • Go Chocolate: Stir in cacao powder for a decadent chocolate version.
  • Extra Flavor Tip: You can add a pinch of cinnamon or pumpkin pie spice if you want a fall-inspired twist, especially if you plan to make my Iced Pumpkin Cream Chai Tea Latte.

Storage:

Store this homemade pumpkin seed milk in an airtight container in the refrigerator for 4-5 days. Always give it a good shake before serving to reincorporate any natural separation. You can also freeze portions for later use, though it's best enjoyed fresh for that creamy, smooth texture.

Recipe FAQs: 

Do I have to use the soaking water?

Definitely! That's why I recommend using filtered water. The soaking water contains nutrients and natural sweetness from the dates and will help create the best results, and keep the milk deliciously flavorful.

Is this milk thicker than cow's milk?

 It can be. Adjust the water to make it thicker or lighter to suit your personal preference.

What can I use this milk for?

Enjoy it in cereal, coffee, smoothies (try one of my latest High Protein Birthday Cake Smoothie), or even in savory recipes. It's also an excellent choice to make creamy beverages or as a free alternative to dairy milk.

  • 1¼ cups raw pumpkin seeds
  • 3-4 Medjool dates pitted
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla bean powder or vanilla extract
  • 32-64 oz filtered water less for richer milk, more for lighter

Soak:

  • Add pumpkin seeds and pitted dates to a bowl. Cover with 32-64 oz filtered water and soak for 4-6 hours or overnight.

Use Soaking Water:

  • Don't toss the soaking water! It's naturally sweetened and great for blending.

Juice:
