These fun summer treats are made with blended watermelon paired with fresh raspberries, a splash of hydrating coconut water, and fruity sea moss gel. It's a simple, better-for-you take on classic ice pops that delivers all the sweet, juicy watermelon flavor but without any added refined sugar, while also getting gut and antioxidant support.

I make these easy watermelon popsicles all summer long (next to my Cherry Mango Popsicles), and they could not be simpler. Just toss everything in the blender and freeze. The combination of ripe watermelon and coconut water keeps them light and hydrating, while a scoop of True Sea Moss gel folds right into the watermelon mixture for a little extra nourishment. They're perfect for pool days, backyard cookouts, or anytime the summer heat calls for something cold and refreshing.

Ingredients To Make These Healthy Watermelon Popsicles: 

Homemade watermelon raspberry popsicles arranged on a cooling rack with fresh watermelon slices, raspberries, and a jar of watermelon raspberry sea moss gel. These refreshing vegan fruit popsicles are naturally sweet, vibrant, and perfect for a healthy summer treat.
  • Seedless Watermelon: Use fresh, cubed seedless watermelon for the sweetest flavor. It's also a great way to use up any leftover watermelon sitting in the fridge, or use any leftovers in my Watermelon Juice.
  • Fresh Raspberries: These add a tart, berry-forward pop of color and a little depth to balance the sweet watermelon.
  • Agave Nectar: Just enough natural sweetness to round everything out, with no added refined sugar. Maple syrup works beautifully here, too.
  • Coconut Water: Keeps the pops light, hydrating, and easy to blend into a smooth watermelon mixture.
  • True Sea Moss Watermelon & Raspberry Gel: My favorite little upgrade for these pops! It melts right into the blend and matches the flavor perfectly, so you get all the nourishing benefits without changing the taste one bit. This flavor and strawberry are my favorites, such as in my Strawberry Banana Smoothie.

How To Make Watermelon Ice Pops: 

  • 1. Blend Everything Together: Add the watermelon, raspberries, agave nectar, coconut water, and True Sea Moss Watermelon & Raspberry Gel to a high-speed blender.
  • 2. Blend Until Smooth: Blend the watermelon mixture until it's completely smooth with no chunks left behind.
  • 3. Fill the Molds: Pour the mixture evenly into your popsicle molds, leaving a little space at the top for expansion as they freeze.
  • 4. Add the Sticks and Freeze: Insert the popsicle sticks and freeze for at least 6 hours, or until completely firm.
  • 5. Release and Serve: Run the molds under warm water for 10-15 seconds to release the pops, then serve immediately and enjoy.

Top Tips: 

  • Use Ripe Watermelon: Look for a watermelon with a creamy yellow spot on the bottom. That's the sign of a sweet, ripe melon and the best watermelon flavor.
  • Leave Room to Expand: Always leave a little space at the top of each mold. The mixture expands as it freezes, and this keeps your molds from overflowing.
  • Blend Fully: Blend until the mixture is silky. A smooth watermelon puree gives you that creamy, even texture.
  • Warm Water Is Your Friend: If the pops won't budge, a quick dip in warm water loosens them right up without melting the whole thing.

Variations And Substitutions:

  • Strawberry Watermelon Popsicles: Swap the raspberries for fresh strawberries to make bright, sweet strawberry watermelon popsicles.
  • Add Fresh Mint: Toss in a few fresh mint leaves before blending for a cooling, garden-fresh twist, especially if you have leftovers from making my Mint Chocolate Chip Popsicles. 
  • Different Sweeteners: Agave keeps these light, but I prefer maple syrup when I want a slightly deeper, more caramel-like sweetness. Both work; just use whichever you have.
  • Extra Fruit: Blend in a handful of other ripe fruit like fresh kiwi or a squeeze of fresh lime juice for a fun twist on the classic watermelon popsicle recipe.

Storage:

  • Freezing: Store the popsicles right in their molds, or transfer them to an airtight container or freezer bag once fully frozen. They'll keep well for 2-3 months.
  • Best Texture: These taste most refreshing within the first few weeks. The flavor stays brightest, and you avoid any freezer burn.
  • Make Ahead: These easy homemade popsicles are made for prepping in advance. Blend and freeze a big batch at the start of the week, so you always have a healthy treat ready during hot weather days.

Recipe FAQs:

Can I make these watermelon popsicles without a special mold?

Absolutely. If you don't have a popsicle mold, small paper cups work as well. Just pour in the watermelon mixture, cover the tops with plastic wrap, and poke a popsicle stick through the center to hold it upright while it freezes.

Do I need to strain the watermelon?

Nope. As long as you're using seedless watermelon and a high-speed blender, you'll get a smooth watermelon puree with no straining required.

Why leave space at the top of the molds?

The watermelon mixture expands as it freezes. Leaving about an inch of space keeps the pops from overflowing and cracking their molds.

Are these popsicles actually healthy?

They're made only with real fruit, coconut water, a touch of agave, and sea moss gel. They have no processed junk and no added refined sugar. It's one of my favorite healthy popsicles for the whole family.
