Creamy Blended Overnight Oats is a super-easy oatmeal recipe that tastes like a treat with its silky, pudding-like base and a delicious sunflower seed butter shell topping made with one of my favorites, Sunbutter.
It's the perfect make-ahead breakfast for busy mornings when you want something effortless but crave-worthy, and it still contains healthy fast and all the wholesome goodness from a healthy morning oatmeal bowl.
I'm no stranger to making overnight oats. My High Protein Pina Colada Overnight Oats or Healthy Creamy Chocolate Overnight Oats are just a few of my go-to easy breakfast meals that taste amazing the next morning and are easy to prep the night before. But blending oats is a first for me, and I'm so hooked. I'm telling you that pulverizing your cozy bowl of morning oatmeal is the breakfast trick you've been waiting for. It's like oatmeal pudding with a thicker consistency than a regular oat mixture, yet all the flavors are there and more.
I've been playing around with different flavor options and testing this recipe a few times until I finally landed on the not-so-secret ingredient that made these overnight oats special-and totally worth posting on my blog: the Sunbutter Magic Shell topping. No kidding, its super creamy consistency instantly hardens over the cooled blended oat mixture, creating that beautiful cracked topping that takes every bite to the next level. You'll wonder how something so easy can taste so darn good. Let's make it!

Ingredients To Make Blended Oats:
Here are the main ingredients needed to make this heavenly breakfast.
- Rolled Oats: The heart of any overnight oats recipe. Choose old-fashioned oats for the best creamy, slightly chewy result. Avoid instant oats or steel-cut oats here. Leave the latter to make my Creamy Hazelnut Steel Cut Oats Recipe-another favorite.
- Sunflower Seed Butter: It's what creates that beautiful magic shell and the star of this recipe, because I'm also using some to blend the oats into a heavenly creamy concoction. I use, of course, no-sugar-added Sunbutter to keep things wholesome while adding richness and healthy fats.
- Coconut Yogurt: Adds tang, probiotics, and a creamy consistency.
- Plant-Based Milk: Use your milk of choice-oat milk, cashew milk, coconut milk, soy milk, or unsweetened almond milk, which are all excellent options. Use whatever you have left from making some of my other recipes, like soy milk from my Vegan Chocolate Chip Baked Oats or coconut milk from my Lemon Poppy Seed Overnight Oats.
- Liquid Sweetener: Pure maple syrup, date syrup, or agave work beautifully. Adjust based on your desired sweetness.
- Vanilla Extract: Adds a splash of warmth and depth in every spoonful.
- Chocolate Chips: Who doesn't want a little chocolate energy to start their day? Get enough to make my Vegan Dubai Chocolate Brownies-my latest obsession.
- Coconut Oil: You only need a little to stir into the Sunflower seed butter and melt into a luscious, crackable layer, making this easy breakfast extra special.

How To Make This Delicious Breakfast:
You are not going to believe how ridiculously easy this blended oats breakfast recipe is. Here's what to do.
- Blend the Base: Blend all the ingredients, except the ones for making the Sunbutter Magic Shell, until silky smooth and it has a pudding-like texture.
- Fold in Chocolate Chips & Chill: Stir the chocolate chips into the blended mixture with a spoon. Transfer the oat mixture to a sealable container (like a mason jar) or an airtight container and refrigerate overnight.
- Make the Magic Shell & Enjoy: Melt the Sunbutter seed butter and coconut oil together until smooth for a few minutes in the microwave. Let it cool slightly, then drizzle it on top of the chilled blended oats mixture the next morning. It will harden into a fun shell! Use a spoon to crack through the shell and enjoy each bite.
Top Tips:
Even with this super-easy recipe, I still have a few top tips for you to make it a great breakfast from the start.
- Blended Oat Mixture: Blend all the ingredients until completely smooth for an authentic oatmeal pudding vibe.
- Chill The Oat Mixture: Make sure to chill the blended oats either overnight or at least for 4 hours, otherwise your Sunbutter Magic Shell won't set.
- Magic Shell Secret: Stir your Magic Shell ingredients slowly to ensure the coconut oil is fully incorporated before melting it briefly in the microwave or over the stove on low heat.
- Sweetener: Adjust it based on your desired sweetness. But I promise it's plenty naturally sweet, so try my suggested amount first and then taste test if you really need to add more.
Variations And Substitutions:
I really encourage you to first try my recipe as-is. It's so easy yet so good. Of all the oat recipes, this might just become your favorite. But here are a few things you might consider swapping or adding.
- Cinnamon Powder: Add a little cinnamon for cozy vibes, similar to my Cinnamon Raisin Baked Oats.
- Extra Chocolate Flavor: Use cacao powder or cocoa powder to enhance the chocolate flavor!
- Toppings: Add your favorite toppings like fresh berries or other fresh fruit, sunflower seeds, hemp seeds, or a sprinkle of cacao nibs for extra crunch.
- Coconut Yogurt: If allergic to coconut, feel free to use your favorite non-coconut-based vegan yogurt.
- Add A Boost of Protein: Feel free to stir in your favorite plant-based protein powder to make it a worthy post-workout breakfast or snack.
Storage:
Keep your blended oats in a sealable or airtight container in the fridge. They're good for up to 4-5 days, making it a great way to meal prep for the entire week.
Wait to add your Magic Shell and favorite toppings until just before serving to keep them fresh and crunchy!
Equipment Needed:
- High-Speed Blender: To blend the oats with the rest of the ingredients into a pudding-like consistency.
- Mason Jar or Airtight Container: For storage.
- Small Bowl: For mixing the Magic Shell.
- Microwave-Safe Plate or Small Saucepan: To melt the magic shell ingredients.
- Spoon: For stirring the chocolate chips into the blended oats.
Recipe FAQs:
You can, but rolled oats (aka old-fashioned oats) provide the best creamy texture and taste. Instant oats can turn a little bit mushy, so I really don't recommend it.
You can easily swap in almond butter, cashew butter, or peanut butter if you don't have any nut allergies. Just note that each of these will slightly change the flavor of this blended oats recipe, especially peanut butter, because of its distinctive taste. Whichever you choose, make sure it's natural and smooth for easy blending.
That said, I highly recommend keeping a few jars of unsweetened Sunbutter on hand. It's such a versatile ingredient-you can use it in breakfast recipes, healthy sweets like my Fluffy Chocolate Cinnamon Rolls, or even in savory dishes like my Creamy One-Pot Vegan Ramen Noodles. The options are endless!
Feel free to add a scoop of plant-based protein powder, vanilla protein powder, or a few spoonfuls of hemp seeds for a serious high-protein kick. Even a chocolate protein powder can work here.
Absolutely! It's a great option for a delicious breakfast that kids (and adults!) will love.
Yes, just make sure to use certified gluten-free rolled oats.
