These Healthy High Protein Pina Colada Overnight Oats are the ultimate quick and easy tropical breakfast. This pina colada overnight oats recipe combines two of my favorite things: overnight oats and tropical fruits. I've made tropical overnight oat recipes in the past, like my Peach Mango Overnight Oats and my Key Lime Pie Overnight Oats, which are perfect for hot summer days. However, I wanted to make an overnight oats recipe that was filled with coconut cream, making it the perfect comforting tropical getaway for any time of year, and that's exactly what this recipe is.

Pina Colada Overnight Oats Ingredients:

Overnight oats are one of my favorite breakfast meals to make because they are such an easy breakfast to make, and they are made with simple ingredients you can pick up at your local grocery store.

Dry Ingredients:

  • Chia Seeds - Chia seeds add thickness and a pudding-like consistency to the oats while providing a boost of omega-3 fatty acids and fiber. They are rich in antioxidants, fiber, and essential fatty acids. They contribute to satiety, support digestive health, and may help regulate blood 
  • Rolled Oats - Rolled oats serve as the base of the overnight oats, providing a hearty and satisfying texture. If you follow a gluten-free diet, make sure to use certified gluten-free oats. Oats are a fantastic source of complex carbohydrates, fiber, and various vitamins and minerals. They can help stabilize blood sugar, support heart health, and provide sustained energy.
  • Shredded Coconut - Shredded coconut enhances the tropical flavor and adds a delightful texture to the oats. Coconut contains healthy fats, vitamins, and minerals. It may support immune function, contribute to healthy skin, and provide a quick source of energy.

Wet Ingredients:

  • Fresh Pineapple - Fresh pineapple adds natural sweetness and a burst of tropical flavor. Pineapple is rich in vitamin C, manganese, and antioxidants. It supports immune function, aids digestion with its enzyme bromelain, and contributes to skin health.
  • Coconut Milk - Coconut milk provides a creamy texture and enhances the coconut flavor in the oats. Coconut milk contains healthy fats called medium-chain triglycerides (MCTs), which can provide a quick source of energy. It also contributes to the creamy consistency of the oats.
  • Coconut Extract - Coconut extract intensifies the coconut flavor in these piña colada overnight oats. While coconut extract is used in smaller quantities, it adds flavor without significant nutritional content. It contributes to the overall taste experience.
  • Vanilla Extract - Vanilla extract enhances the sweetness and adds a warm, comforting flavor. Vanilla extract is low in calories but imparts a pleasant aroma and taste. It contains antioxidants and may have calming effects.
  • Coconut Yogurt - Coconut yogurt adds creaminess, tanginess, and additional coconut flavor to the oats. Coconut yogurt is a dairy-free alternative that provides probiotics for gut health. It also contributes to the overall texture and flavor profile of the recipe.

How To Make These Pina Colada Overnight Oats:

These piña colada overnight oats are the perfect healthy breakfast because they are filled with so many healthy ingredients and are so easy to make. 

  1. Prepare the Pineapple:
    • Dice the fresh pineapple into small, bite-sized pieces.
  2. Mix Dry Ingredients:
    • In a bowl or jar, combine rolled oats, chia seeds, shredded coconut, and the plant-based protein powder.
  3. Add Wet Ingredients:
    • Pour in the coconut milk, coconut extract, and vanilla extract. Mix well to ensure the dry ingredients are evenly coated.
  4. Add The Oats:
    • Add a layer of the oat mixture to the bottom of the jar. 
  5. Top With Pineapple:
    • Add a layer of the chopped pineapple on top of the oats. 
  6. Top with Coconut Yogurt:
    • Spoon the coconut yogurt on top of the pineapple. This adds a creamy texture and enhances the coconut flavor.
  7. Repeat: 
    • Repeat this process once more to create more layers. 
  8. Cover and Refrigerate:
    • Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Allow it to soak overnight or for at least 4-6 hours.
  9. Serve and Enjoy:
    • The next morning, stir the mixture. You can enjoy it straight from the jar or bowl. If desired, top with additional fresh pineapple or a sprinkle of shredded coconut for added freshness and texture.

Hint: The longer these pina colada overnight oats sit, the more the tropical flavors will marinate together. Making them in the afternoon and letting them soak overnight is a great way to achieve the perfect flavor.

Substitutions:

There are a handful of easy substitutions that can be made to this overnight oats recipe if needed. Here are some of the common ones. 

  • Greek Yogurt - If you can't get your hands on coconut or do not follow a vegan diet, you can use Greek yogurt in place of coconut yogurt. 
  • Pineapple Juice - If you can't find fresh fruit or prefer not to use it, you can use pineapple juice or canned pineapple in place of the fresh fruit.
  • Coconut Flakes - Any variety of coconut will work perfectly in this recipe. You can use shredded coconut, coconut chips, fresh coconut, etc. They all taste delicious and have unique textures. Use leftovers to make my Healthy Homemade Chunky Granola.

Variations:

These delicious piña colada overnight oats are fantastic because there are so many fun and delicious ways to mix them up. Here are some of my variations to make.

  • Omega's - I love adding Omega 3s,6s, and 9s to my overnight oats. If you are looking to boost the nutritional value of this overnight oats recipe, you can add flax seeds and hemp seeds to the oat mixture. You can use all these seeds in my Nut-Free Vegan Energy Bites as well!
  • Fresh Fruit - There are plenty of great ways to add extra tropical vibes to these oats. You can add banana slices, diced mango, or any of your favorite tropical fruits for added flavor.
  • Extra Sweet - If you prefer oats that are on the sweeter side, you can add a drizzle of maple syrup to these pina colada overnight oats for the perfect sweet touch.

Equipment:

Overnight oats are the best because they hardly require any equipment. Here's what I recommend having on hand when making these oats. 

  1. Bowl or Jar:
    • Use a bowl or a mason jar with a lid for mixing and storing the overnight oats. Glass mason jars are convenient if you plan to take it on the go.
  2. Measuring Cups and Spoons:
    • For accurate measurements of both dry and wet ingredients.
  3. Knife and Cutting Board:
    • To dice the fresh pineapple into small pieces.
  4. Spoon or Spatula:
    • For mixing the ingredients thoroughly.
  5. Lid or Plastic Wrap:
    • Cover the bowl or jar before placing it in the refrigerator. This helps the oats soak and develop flavors while preventing them from drying out.

How To Store These Vegan Overnight Oats:

Overnight oats are the ultimate meal-prepped breakfast. They are super easy to store and last for a long time. I recommend storing them in an airtight container. If stored properly, they will stay fresh for up to a week. As time goes on, you may need additional coconut milk to ensure they stay creamy.  

You can also store the dry mixture in the pantry before adding the coconut milk. This is a great way to meal prep these oats for travel. 

Top Tip: 

You can adjust the creaminess of these piña colada overnight oats by using creamy coconut milk rather than light coconut milk. This will raise the fat content, but it will be so delicious!

Frequently Asked Questions:

Can I use instant oats instead of rolled oats?

Yes, you can use instant oats, but keep in mind that the texture may be different. Rolled oats provide a heartier texture, while instant oats might result in a softer consistency.

Can I warm up the overnight oats before eating?

​Yes, you can warm them up if you prefer. Simply heat them in the microwave for 30-60 seconds or until they reach your desired temperature.

Can I use frozen pineapple instead of fresh?

Yes, you can use frozen pineapple. Allow it to thaw slightly before adding it to the oats. The texture may be a bit different than with fresh pineapple.

Dry Ingredients:

  • 1 cup rolled oats

Wet Ingredients:

  • 2 cups coconut milk
  • ½ cup chopped pineapple

Repeat:

  • Repeat this process once more to create more layers.

Cover and Refrigerate:

  • Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Allow it to soak overnight or for at least 4-6 hours.

Serve and Enjoy:

  • The next morning, give the mixture a good stir. You can enjoy it straight from the jar or bowl. If desired, top with additional fresh pineapple or a sprinkle of shredded coconut for added freshness and texture.
