I know that not everyone is a fan of canned goods, and I totally get it, but when you’re not in the mood to cook, they can be a lifesaver! There’s definitely health benefits to choosing fresh produce over canned goods, but sometimes that option is just not feasible.

Second, use plum, or roma tomatoes, they are much less watery, and have the perfect flavor. Last, but not least, use a high speed blender. Owning a Vitamix has honestly changed my life, so if you’re considering investing in one, I highly recommend it!

This may seem like a turn off at first, but I assure you that just because it takes a long time to cook, does not mean there’s a lot of cooking involved. I usually go with lite simply because I am a volume eater, and I just find that it works better for me to eat a low fat diet.

I would recommend using a higher fat milk like soy (make sure it’s unflavored) to achieve the right creaminess. - Lite Coconut Milk
- Tomato puree
- Tomato Paste
- Diced tomatoes
- Italian seasoning
- Whole wheat flour, or tapioca flour/chickpea flour for a gluten-free version
- Vegetable broth
- Onion powder
Vegan Creamy Tomato Soup
- 1 6oz can tomato paste
- 1 14.5oz can diced tomatoes
- 1 28oz can tomato puree
- 1 15oz can lite or full fat coconut milk
- 4 cups vegetable broth
- 4 cloves garlic
- 2 tsp onion powder
- 2 tbsp Italian sesaoning
- 2 tsp fresh rosemary
- 2 tbsp whole wheat flour, or tapioca/chickpea for a gluten-free option
- To make, simply mince the garlic and combine with all ingredients into a large pot. Set to medium heat and cook for 30 minutes. Stirring every so often.
- Serve with toasted bread, extra herbs and coconut cream, enjoy!
