I know that not everyone is a fan of canned goods, and I totally get it, but when you're not in the mood to cook, they can be a lifesaver! There is definitely health benefits to choosing fresh produce over canned goods, but sometimes that option is just not feasible.
With that said, you can make this vegan tomato soup recipe as is, or you can make it with fresh tomatoes. If you hate cooking, making this recipe with canned goods (see recipe card for instructions) can be a game changer. It's the perfect easy recipe that is loaded with vegetables, and doesn't require hands on cooking.
Finding recipes like this is the best way to eat healthy if you don't like cooking. To make it with canned goods, simply follow recipe instructions. If you do go this route, make sure that you choose unsalted and BPA free canned goods.

How To Make Low-Fat Creamy Vegan Tomato Soup:
There's actually two ways to make this vegan creamy tomato soup, and both are fabulous! You can make this creamy vegan tomato soup using a low fat option, or a high fat option. Both are still healthy and delicious.
It is totally up to you which option you go with. You can use full fat coconut milk, or lite coconut milk. I usually go with lite simply because I am a volume eater, and I just find that it works better for me to eat a low fat diet.
If you're not a fan of coconut, or have a nut allergy, you can use any other plant based milks to make this soup creamy. I would recommend using a higher fat milk like soy (make sure it's unflavored) to achieve the right creaminess.
You can honestly use any plant based milk such as almond mil and it will still come out creamy and delicious. Just make sure that you are using plain almond milk and not vanilla. Like I said before, it's up to you, because that's who these recipes are made for!

- Garlic - You can also use garlic powder.
- Onion Powder - You can also use diced onions for a chunkier soup.
How To Make This Plant Based Tomato Soup:
This Vegan Creamy Tomato Soup is almost too easy. I really debated on if I should share this recipe to my website, or not. However I make it so often, that I figured my website wouldn't be complete without it.
Since this recipe uses canned ingredients and dried herbs, it takes about 5 minutes to prepare, and 30 minutes to cook. This is perfect if you don't love cooking, or want a soup that is not hands on.
To make this plant based Tomato Soup, simply mince the garlic and add to a large pot with the whole wheat flour and a splash of coconut milk. Cook until there are no clumps of flour.
Next, add the remaining coconut milk, canned tomato puree, canned tomato paste, vegetable broth, canned diced tomatoes, rosemary, Italian seasoning, dried or fresh basil, and onion powder. Cook on medium heat for 30 minutes.
Serve with bread and enjoy!
Substitutions:
There are a variety of easy and quick substitutions that can be made to this creamy vegan tomato soup. Here are some of the common ones I get asked about.
