Woo! It's time fore another Mexican recipe friends! I've been on a huge salad kick recently, and this plant based taco salad with chipotle ranch has been one of my go to recipes. I feel like it's impossible to hate Mexican food, so if you're someone who struggles to eat salads than this recipe is for you! I've been working on creating a variety of salad recipe to fill my blog with tons of options so you have an abundance of healthy recipes to choose from! You know it! Not only is this salad recipe packed full of flavor, but it is also nutrient dense. I love when I can create recipes like this that don't necessarily taste healthy, but are. This plant based taco salad recipe is full of healthy and fresh produce as well as a creamy oil-free dressing. One of my favorite ways to add flavor and nutrients to my recipes is to spice them up! Spices and herbs are one of the easiest ways to spice up recipes and add extra health benefits.

Perfect vegan salad for non vegans:

Being vegan and making food for non vegan family and friends is a struggle. I am the only vegan in my family and friend group, so I run into this issue often. Even vegan recipes that are delicious are often given the stink eye from non vegans, because they simply aren't familiar with the food. The solution I have found to work best against this is to make foods that they are familiar with. For example you can go to just about any Mexican restaurant and order a taco salad. Therefore if you make a vegan taco salad recipe your non vegan peers will be comfortable trying it out. I have some other recipes that my non vegan friends and family love, here are some of my go-to recipes:

How To Make Affordable Salads:

Listen, a sis is balling on a budget over here. I love eating healthy salads like this plant based taco salad and I love saving money, so how do I do both of these at the same time? It's simple: I shop seasonally, and buy in bulk. It's easy to make an expensive salad when you are purchasing ingredients that are out of season, and buying ingredients for a one time event.

Shopping seasonally can save you so much money and add extra nutrients to your diet. See what produce is on sale at your local grocery store, and check a produce calendar to see what is fresh when. I've wasted a lot of money buying ingredients for one recipe and then never using them again. However, there are certain ingredients that I have done the math for, and it just makes sense to buy them in bulk. Cashews are a bulk must. I buy my organic cashews from Wilderness Poets.   • Romaine
  • Black beans
  • Red onion
  • Corn
  • Avocado
  • Roma tomatoes

Taco Salad with Chipotle Ranch

Ingredients
  

For the Taco Salad:

  • 3 heads romaine
  • 1 15.4oz can black beans
  • 1 red onion
  • 1 ½ cups corn
  • 1 avocado
  • 5 roma tomatoes
  • 3 corn tortillas

For the vegan chipotle ranch:

  • ½ cup soaked cashews
  • 1 can aquafaba (liquid from low sodium chickpeas)
  • 1 lemon
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon fresh chives
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • cayenne pepper to taste

Instructions
 

To make the salad:

  • Begin by chopping the tortillas into strips and placing in the air fryer, or oven until crispy.
  • Chop the vegetables into bite sized pieces, and add to a salad bowl.

To make the dressing:

  • Make the dressing by simply combining all ingredients together in a high speed blender and blend. Once smooth, pour over salad and top with tortilla strips. Serve and enjoy!
