Vegan Almond Butter Cookies Ingredients:
These homemade almond butter cookies are the perfect flavorful cookies to make because they only require a handful of ingredients, and they're absolutely delicious!
Dry Ingredients:
- Gluten-Free Flour - Serves as the base for the cookies without the inclusion of gluten, catering to those with gluten sensitivities. If you do not follow a gluten-free diet, you can use all-purpose flour or whole wheat flour. It supports digestive health for individuals sensitive to gluten and often contains a mix of nutrient-dense flours for added vitamins and minerals.
- Maple Crystals - Adds sweetness to the cookies in a natural, unrefined form. Maple crystals are a 1:1 substitute for white sugar that comes from maple syrup. However, they are sweeter than white sugar; therefore, a little goes a long way. It contains antioxidants, vitamins, and minerals and has a lower glycemic index compared to refined sugars, helping to regulate blood sugar levels. As always, you can get yours from Wilderness Poets. I recommend buying them in bulk for the best value. Use the code: "NATURALVEGAN" to get $10 off your purchase of $49 or more!
- Ground Flaxseed - This will be combined with the water to create a flax egg. A flax egg is a 1:1 substitute for regular eggs. Flaxseed is rich in omega-3 fatty acids, fiber, and lignans, supporting heart health and digestion and providing anti-inflammatory properties.
- Cornstarch - Enhances the cookies' tenderness and contributes to their light texture.
- Baking Soda - A leavening agent that helps the cookies rise.
- Vanilla Bean Powder - Adds a fragrant and flavorful element to the cookies. Antioxidant properties and potential mood-enhancing effects. You can also use vanilla extract if needed.
- Vegan Chocolate Chips - Introduces a delightful chocolatey component to the cookies. When made with high-quality dark chocolate, provides antioxidants and may offer cardiovascular benefits. These vegan chocolate chips from Wilderness Poets are my absolute favorite ones to use. They're made with organic heirloom cacao and sweetened naturally with coconut sugar! The taste is amazing, and they are perfect for classic chocolate chip cookies.
- Use the code: "NATURALVEGAN" to get $10 off your purchase of $49 or more!
- Sea Salt - A sprinkle of sea salt helps to elevate the flavor of these cookies. I recommend using flaky salt.
Wet Ingredients:
- Almond Butter - Serves as a primary fat source and imparts a rich, nutty flavor. Packed with healthy monounsaturated fats, protein, vitamins, and minerals, supporting heart health and providing sustained energy. I recommend using this one from Wilderness Poets because it is made in small batches with 1 simple ingredient: organic almonds. Use the code: "NATURALVEGAN" to get $10 off your purchase of $49 or more!
- Water - This will be used with the ground flaxseed to create the flax egg.

Substitutions:
There are a handful of easy and delicious substitutions that can be made to these vegan almond butter cookies if needed. Here are some of the common substitutions.
- Almond Flour - If you want to make these cookies paleo, you can use a paleo baking mix, or almond flour in place of the gluten-free flour for flourless almond butter cookies. Keep in mind that this will affect the texture of the cookies, and they won't have the same chewy texture.
- Sugar - If you can't use maple crystals for whatever reason, you can use coconut sugar or brown sugar in place of the maple crystals. I don't recommend this because it affects the flavor and color of the cookies, but if you must, it will work.
- Nut-Butter - If you can't use almond butter, you can use raw cashew butter, natural peanut butter, or sunflower seed butter (for a nut-free option) as a 1:1 substitute.
If you have any questions about a particular substitution not listed, leave a comment, and I'll get back to you as quickly as possible!
Vegan Almond Butter Cookies Variations:
If you are looking for a new, fun way to mix these vegan almond butter cookies up the next time you make them, make sure to give one of these cookie variations a try!
- Oatmeal Cookies - A great way to enhance the texture of these cookies is to add oatmeal to the cookie dough. I recommend adding ⅓ cup oats, and an addition 2 teaspoons of water to the cookie dough.
- Nutty - You can add sliced almonds or any of your favorite nuts into the cookie dough for the perfect added crunch to these chewy cookies.
- Almond Extract - If you love almond flavor, you can add a teaspoon of almond extract to these cookies for the perfect rich almond flavor.

How To Store These Almond Butter Chocolate Chip Cookies:
Proper storage is crucial to maintain the freshness and texture of your Almond Butter Chocolate Chip Cookies. Here's a guide on how to store them:
- Cool Completely:
- Ensure that the cookies are completely cooled to room temperature before storing to prevent condensation.
- Airtight Container:
- Place the cookies in an airtight container. This helps retain their moisture and prevents them from becoming stale.
- Layering:
- If stacking the cookies, place a piece of parchment paper or wax paper between layers to prevent them from sticking together.
- Avoid Moisture:
- Store cookies in a cool, dry place. Moisture can lead to a loss of crispness and promote mold growth.
- Refrigeration (Optional):
- While it's not necessary, you can refrigerate the cookies if you want to extend their shelf life. I personally like the taste of them chilled best. This is especially useful if your kitchen tends to be warm. Ensure they are in an airtight container to prevent the absorption of odors from the fridge.
- Freezing (Optional):
- Cookies can be frozen for longer storage. Place them in a single layer on a baking sheet and freeze until solid. Then, transfer them to a freezer-safe bag or container. Label with the date for reference. When ready to enjoy, thaw at room temperature. I don't recommend freezing for longer than 2 months.
- Avoid Odor Transfer:
- Store cookies away from strongly scented foods to prevent them from absorbing unwanted flavors.
- Enjoy Fresh:
- For the best taste and texture, consume the cookies within a week or freeze them for longer-term storage.
By following these storage tips, you can keep your Almond Butter Chocolate Chip Cookies fresh and delightful for an extended period.
Top Tip:
Adding the flaky sea salt is a must. It adds the perfect sweet and salty flavor combination, and it looks stunning.
Frequently Asked Questions:
Both peanut butter and almond butter have their nutritional benefits and unique flavors. If you have no nut allergies and are looking for a more affordable option with a distinctive flavor, peanut butter might be your choice. On the other hand, if you prefer a slightly sweeter taste, want to avoid peanuts due to allergies, or are aiming for the specific nutritional benefits of almonds, almond butter could be the better option for you. Ultimately, the "better" choice depends on your individual taste preferences and dietary needs.
Almond butter is generally considered anti-inflammatory due to its nutrient content. Almonds, the primary ingredient in almond butter, are rich in monounsaturated fats, vitamin E, and magnesium, which have anti-inflammatory properties. Additionally, almonds contain antioxidants that may help reduce inflammation in the body.
