I am excited to bring today’s beets and kale juice recipe! I have been juicing like a crazy person lately. It just makes me feel so good! This kale beet juice has been one cold pressed juice recipe that I have been making on repeat. I am also obsessed with this recipe because it is loaded with superfoods and nutrient dense ingredients.

Summer is right around the corner and my body is craving raw fruits and vegetables like crazy. I’ve shared how I am trying to eat and share more raw vegan recipes, because I feel amazing when I eat more raw produce. However it is hard to eat that much raw vegan meals, because it’s a lot of chewing! My solution: raw vegan juices like this beets and kale juice recipe!

I personally do not believe that juicing is a miracle practice, but I do believe that it can dramatically assist your overall health. This beets and kale juice recipe is incredibly nutrient dense by itself. However there’s actually ways to increase the nutrition of this kale beet juice recipe even more! First, choose organic produce. I’ll touch on this more later. Second, look for things such as purple kale instead of regular. Regular kale is already a superfood, but if you can find purple kale you are finding a superfood with added antioxidants! Last, but not least, feel free to add any leftover produce in your fridge. Whenever I am juicing recipes like this kale and beet juice I always look for what I have leftover in my fridge and throw it in, because the more the merrier when it comes to whole foods plant based ingredients!

Why it’s important to choose organic for this beet kale juice:
Time to get into a topic that I have recently been very invested in recently. That is: why choosing organic produce is important. I hope at this point we all have a general idea of why eating organic is better: less pesticides, non GMO, etc. However we may not all be actively participating in the organic food life. I am here to convice you that you should start choosing organic produce when making recipes like this kale beet juice.
First, organic = more nutrients. Organic produce is often picked when ripe, and therefore is more nutrient dense. It’s important if you are making this beets and kale juice recipe that you choose organic, because the goal is to incorporate more nutrients into your diet, and the way I see it is: go big, or go home!
Second, organic produce is better for your gut health. This is actually what convinced me to start eating more organic produce. When you eat conventional produce that is sprayed with pesticides you are unintentionally killing your good gut bacteria. Let me explain. Pesticides are used to keep bugs and diseases away from produce by killing them. Which is all good and well. However when you eat conventional produce you are eating the pesticides too. When these pesticides make their way into your gut, they kill off the good bacteria that is working to make your gut healthy. Therefore even when you are eating healthy food with good intention you could be damaging your gut.
Now don’t get me wrong. It is still a million times more healthy to eat whole foods plant based foods that aren’t organic than to eat processed foods (which are almost never organic). But if you are looking to improve your health even more, this is something to look into!
Can I prep this kale beet juice:
Even with the Kuvings cold pressed juicer, juicing can be time consuming. If I could spend the time juicing fresh everyday, I would. However at the end of the day, I just do not have time to make fresh juices everyday. However with the Kuvings juicer you can make your juices and they will store in the fridge for 72 hours!
I love batch making juice for the week on Sundays then again on Wednesdays so I can have nutrient dense juices like this kale and beet juice throughout the entire week! I find that this is the easiest way to incorporate juices into my diet, because I have the bottles prepped and I am ready to go for the entire week. Note that most juices, including this kale beet juice will separate in the fridge, but it will go back to normal if you just give it a quick shake!
Ingredients for this beets and kale juice recipe:
Kale Beet Juice
- 1 pineapple
- 2 beets and beet greens
- 1 inch piece ginger
- 1 bunch kale
- Begin by removing the skin from you pineapple and cutting the bottom and top off the beets. Cut the beet greens off as well.
- Chop the ingredients into medium pieces and add to the juicer, alternating between kale, beets, ginger, and pineapple. Serve and enjoy!
